So I wanted to do a fun project with my 7 year old for St. Patrick’s Day and came across this cute idea on Pinterest.   My 7 year old loves baking with me.   Well, okay maybe he actually doesn’t like the baking as much as he likes to be in control of my Kitchenaid Stand Mixer.   He is obsessed with it 🙂  Anyway, I thought this would be a cute and easy project for mom and son while dad was at softball for the night.   It didn’t include the Kitchenaid stand mixer but he was game!  It’s St. Pat’s Twisted Shamrocks!  We also were creative and made them into spring flowers.   I hope you enjoy making these with your little one and much as I did!

Here is what you will need: baking sheet, foil or parchment paper, bag of small twisted pretzels, bag of pretzels sticks, bag of Hersey’s Kisses and one bag of M & M’s.   Heat oven at 200 degrees before you start.  Then assemble 3 pretzels like the picture below.

Then you will place a Hersey Kisses in the middle of the pretzels.   Do this until your baking sheet is full with pretzels.

Place in the oven for 4 minutes until the chocolate kiss gets soft.  Then remove from the oven and place the pretzel stick in the center of the kiss for the stem and press down.   If the pretzels slide out of place, gently push them back toward the center.  Then you will want to place the M & M on top of the pretzel stick -you want the Kiss to moosh around the pretzels, cementing them together.

You will have to let them harden for about 30 minutes.   After they have harden, you can enjoy!   My son and I made up 6 spring flowers for his teacher too.   We used yellow and orange and red M & M’s.  I think if you buy the Easter color M & M’s it would look even better.  But we worked with what we had on hand.  Here is a picture of my son’s spring flower.

Tuesday Cook Off ~ Mini Chicken Pot Pies

So I have to admit, I am becoming obsessed with cooking food in a muffin pan.   First, they are the perfect serving size if you are watching your food intake and second, they are so cute!   You have to agree they do make a cute meal 🙂   Anyway, I had been looking for a easy recipe for a chicken pot pie recipe and came across this recipe from quick-dish.tablespoon.com.   This recipe was so easy to make and so good.   I made them for dinner for the whole family and then had left overs for lunch.  I just love when that happens.   My husband absolutely just loved them.   He even had his left over chicken pot pie cold and said it was just as good cold.

February 20, 1993, we were both just 23 years old.   What were we thinking getting married so young?   Well, we were in love!  We met in college through a mutual friend and knew we were going to be together forever.   Was it love at first sight…hell no!  But it developed into the kind of love that stayed up late talking and laughing until the sun came up.  It still is on some occasions.  Not as much as we like because a) we have two boys b) we have to work in the morning c) we are old 🙂  So what are the secrets to our happy marriage?

1. Communication:  Talk to your spouse about something other than work, money, kids, and the relationship.  This is very important and know we all forget to communicate with each other.   When the open communication is gone, the walls go up.  Once the walls go up, it’s hard to break them down.   Surprise your spouse tomorrow with a 10-minute talk without the kids around.   Ask how they are doing.

2.  Let go of the past, learn to forgive:  Letting go of the past is key to a happy marriage.   Why waste energy and time trying to change something that has already happened.   Focus on the now, not the then!

3.  Affection:   Men crave affection more than women.  Surprise!!  Men look for affection that is non sexual and want to feel special and wanted.   Women, however, don’t crave this as much because we get this feeling from our girl friends.   Make sure to take the time to make your husband feel special.   Take the time to text him or call him at work just to say hi and I love you.   My husband and I now do this on a daily basis.   Seems stupid but it’s special every time.

4.  A crisis doesn’t mean the marriage is over:  Crises are like storms: loud, scary and dangerous. But to get through a storm you have to keep driving. A crisis can be a new beginning. It’s out of pain that great people and marriages are produced.

5. Laugh and laugh a lot: Make the time for alone time in this crazy world and just laugh with each other.  Watch a funny movie together.   Talk about something silly but just remember to laugh!

6.  Marry your best friend 🙂

By now you probably have figured out that my family loves pretzels.  If you follow us on Facebook, Twitter, and Instagram, you have seen many pictures of pretzels.  They LOVE pretzels.   They would have me make them every week.  So with that being said, I have tried many pretzel recipes.  But this one is my favorite.   This recipe is for 12 pretzels but most of the time I cut the recipe in half and only make six.   Pretzels taste so much better right from the oven 🙂  Also, I usually make 3 regular with salt and 3 with the cinnamon and sugar.    The picture is of one of each.

Here is the recipe:

2 cups milk
1 1/2 tablespoons (2 packets) active dry yeast
6 tablespoons brown sugar
4 tablespoons butter, melted
4 1/2 cups flour
2 teaspoons fine salt

1/3 cup baking soda
3 cups warm water
Coarse salt
8 tablespoons butter, melted in a shallow dish

Warm up the milk in the microwave or on the stove for just about one and a half minutes. It should be about 110º. If it’s too hot it will kill the yeast. You should be able to comfortably keep your finger in it. Stir in the yeast and let it sit for about 3 minutes. Add the butter and sugar. Add the flour about 1 cup at a time and the add the fine salt. Kneed for about 10 minutes with a stand mixer, or by hand. Put it in a greased bowl and cover with greased cling wrap. Let rise for 1 hour in a moist, warm place until doubled in size. Preheat the oven to 450º. Punch down dough and divide into 12 lumps (I like to divide it in half, then divide each half into three, and then divide each remaining one in half again). Roll them all out as thin as you can. Combine the warm water and baking soda in a wide bowl. Form the dough into pretzel shapes, then dip in the baking soda water. Place on a greased baking sheet and sprinkle with coarse salt. Bake for about 7-11 minutes or until browned. Dip each in the melted butter while hot. Serve with cheese sauce.

My Baby Pajamas decided this week we would focus on man’s best friend.  We wanted to share one of our recipes for homemade dog treats.   Our pitbull mix has sensitive skin and noticed that when we make him homemade treats his skin is better and he doesn’t itch as much.   We have to take care of our four legged family members too 🙂   So a few weekends ago, my sons and I researched for an easy and simple homemade dog treat.   Well, we found one and our dog Chance just loves them.   After baking, you can store them in an airtight container for up to two weeks.   The parsley in these treats makes them a secret breath freshener for your four legged best friend.

Here is the recipe:

Ingredients:

  • 1 banana, peeled
  • 1 cup oat flour
  • 2/3 cup rolled oats
  • 1/2 cup dried parsley
  • 3 tablespoons peanut butter
  • 1 egg, beaten

Preheat oven to 300°F. Put banana in a large bowl and use a spoon or potato masher to mash it thoroughly. Add oat flour, oats, parsley, peanut butter and egg and stir well to combine. Set aside for 5 minutes.

Roll mixture into 24 balls, using about 1 tablespoon dough for each; transfer to a large parchment paper-lined baking sheet as done. Use the back of a spoon or the heel of your hand to press each ball into a (1 1/2- to 2-inch) coin. Bake until firm and deep golden brown on the bottom, 40 to 45 minutes. Set aside to let cool completely.

Storage note: It’s best to store these in an airtight container in the refrigerator. Or, freeze them to give to your pal later; just be sure to thaw the treats before handing them out.

Do parents always lead by example?  Probably not, but we really should.  If parents are going to talk the talk then we really should walk the walk with our kids.  Actually, this holds true with anything.  Our kids look up to us and as they get older they are watching our every move, trust me on this one.

Today is a perfect example of leading by example:  I am an avid runner and have a race coming up in about 3 week.  Today I needed to run 6 miles for training.  This morning when I took the kids to school, I said out loud to my oldest,” When you both get home, you need to watch your brother while I go run.”  Okay, this was my mistake!  Guess what?  I didn’t feel like running today at A-L-L!  Yesterday, I thought I would help my body out and decided to do power yoga to stretch my muscles from running.   Bad idea.  I woke up swore.  I thought it would get better as I went to work and started to move around.  It didn’t.   All I wanted to do was put my Esme pajamas on, bathe my younger son and put his favorite boys pajamas on and watch TV.   This was not going to happen.  My oldest had a basketball game and my husband was going to the hockey game.  Damn!

Now fast forward to me sitting on the computer checking my emails.   My oldest comes in and asks me when I am going to go run.  Ugh!  I don’t feel like running at A-L-L.   And as I am about to tell him this, I stop and think about his basketball game tonight.   I know my husband and I will tell him to play hard and hustle.  If I tell him I am not going to run, I know he will say something to me about training for the race and playing sports blah blah blah!!  Yes, this is what teenagers do; throw everything back in your face 🙂  So I say to him, I am getting ready to go now.

Shoes are laced up and I am heading out the door, still not wanting to run at A-L-L.   But as my feet start to hit the pavement and I get into my groove…nothing.   I still really don’t want to run.  We all have our days:)  But I did the 6 miles.  Probably the worst 6 miles I have done but I did them and it felt good just to finish.

Now, it’s time to go to my son’s basketball game.   Guess what?  He’s dragging his feet to get ready.   He’s tired blah, blah, blah.   Good thing I went and ran because now I can use this as an example that sometimes we don’t feel like doing something but we suck it up and just do it.   Well, it wasn’t the best game of my son’s life but he went and played and played hard.   They lost in overtime by 1 point and they were heartbroken.  But they all played hard and did their best.  You can’t win them all:)

This week My Baby Pajamas is featuring two recipes.   In our last post, we stressed how important it is for kids and adults to eat breakfast.  As adults, we often skip breakfast because we are racing around in the morning trying to get ready for work, get the kids to school etc.   Well, My Baby Pajamas wanted to share two of our favorite quick morning breakfast meals.   These are two easy and quick recipes you can make up and store in the refrigerator for the week.  The first recipe is the Ham and Mushroom Scrambled Egg Cups and the second recipe is the No Bake Energy Bites.   The No Bake Energy Bites are so good you can even eat them as a snack or dessert:)  We want to say thank you to gimmesomeoven.com for the No Bake Energy Bites and The Blonde Can Cook Blog for the Ham and Mushroom Scrambled Egg Cups. My husband just loves the egg cups and the nice thing about the egg cups is that you can always change the ingredients.

No Bake Energy Bites Recipe:

Ingredients

  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed or wheat germ
  • 1/2 cup chocolate chips (optional)
  • 1/3 cup honey
  • 1 tsp. vanilla extract

Method

Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.

While parents need to eat breakfast to perform at their daily best, kids need to eat breakfast even more.   Kids bodies are always growing and their bodies rely on regular healthy food intake.  When kids skip breakfast, they can end up going for long periods of time without food and this period of semistarvation can create a lot of physical, intellectual, and behavioral problems for them.

If you and your kids regularly skip breakfast in the interest of saving time, calories, or getting a few more minutes of sleep, remember that eating a wholesome, nutritious morning meal will probably save you time in the long run.  This is an interesting fact: studies show that kids who skip breakfast are tardy and absent from school more often than children who eat breakfast on a regular basis. Preparing a good breakfast can be as quick and easy.  Make sure to check back with our blog tomorrow.  My Baby Pajamas Tuesday Cook Off will feature two quick and easy breakfast for adults and kids.   Both recipes are a big hit in our house and the great thing is they can be prepared on the weekend and stored in the refrigerator for the week.

Adults tend to skip breakfast in an effort to lose weight but doing this can actually do the opposite and make you gain weight not loss weight.  According to research, skipping meals, especially breakfast, can actually make weight control more difficult. Breakfast skippers tend to eat more food than usual at the next meal or nibble on high-calorie snacks to stave off hunger. Several studies suggest that people tend to accumulate more body fat when they eat fewer, larger meals than when they eat the same number of calories in smaller, more frequent meals. To teens, especially teenage girls, skipping breakfast may seem like a perfectly logical way to cut down on calories and lose weight. It’s important for moms to educate their kids about the importance of the morning meal and the role it plays in maintaining good health and preventing obesity.

Mom and Dad, your kids look up to you and if you don’t eat breakfast, why should they?   By eating breakfast everyday, you are showing your kids how important it is to eat breakfast plus you are establishing a good healthy habit that will continue a life time.
