I just wanted to let everyone know that we have received our first shipment of Christmas pajamas. Yes, I said Christmas pajamas. I know the kids just went back to school but before you know it it will be Christmas! Don’t delay because I am not sure what sizes I will be able to get back in stock as the pajamas start to sell. I will also be bringing in a couple of footie Christmas pajamas. These have not arrived yet but I will let you know as soon as they arrive.
My Baby Pajamas has brought in 3 styles from Sara’s Prints Pajamas. All three styles are 100% cotton long johns. These pajamas are made to fit snug so if you are unsure about a size I would recommend going up a size just to be safe.

After a week off, I am excited to announce this weeks Tuesday Cook Off. This dish was super easy and my family just loved it. Now of course you have to be a fan of feta cheese and olives to enjoy this dish. The chicken breasts are roasted in lemon juice, keeping the chicken super moist and flavorful. If you have a busy week night, this dish comes together in less than an hour. I promise it will be a favorite. I served the Greek Salsa Chicken with Garlic and Herb Roasted Potatoes. The boys just loved them!! My youngest even had seconds!!
Here are the recipes:
Greek Salsa Chicken from Sweet Peas Kitchen
Ingredients:
4 ounces crumbled feta cheese
1 cup halved grape or cherry tomatoes
1/4 cup pitted kalamata olives
1/4 cup minced fresh parsley
1/4 cup lemon juice
1/4 cup olive oil
1 tablespoon freshly chopped oregano
For the Chicken:
6 boneless, skinless chicken breast halves (7 ounces each)
pepper to taste
kosher salt to taste
2 tablespoons olive oil
2 lemons, cut into wedges
In a large bowl, combine feta, tomatoes, olives, parsley, lemon juice, 1/4 cup olive oil and oregano. Cover and chill in refrigerator.
Heat 2 tablespoons olive oil in a large roasting pan over medium-high heat. Season chicken with kosher salt and pepper. Sear chicken, about 1-2 minutes each side; remove from heat.
Squeeze lemon wedges over chicken to coat. Place the squeezed lemon wedges around the chicken breasts. Roast until chicken reaches an internal temperature of 160°, about 25-30 minutes. Transfer chicken and lemons to a large platter. Top with salsa.
- 1 teaspoon Oregano Leaves
- 1 teaspoon Paprika
- 1 teaspoon Thyme Leaves
- ¾ teaspoon Sea Salt
- ½ teaspoon Garlic Powder
- 2 pounds baby red potatoes, quartered
- 2 tablespoons olive oil
- Preheat oven to 425°F. Mix oregano, paprika, thyme, sea salt and garlic powder in small bowl. Set aside.
- Toss potatoes with oil in large bowl. Sprinkle seasoning mixture over potatoes. Toss to coat well. Spread potatoes in single layer on foil-lined 15x10x1-inch baking pan.
- Bake 30 to 35 minutes or until potatoes are tender and golden brown.

I know a lot of the country is having snowy weather and cold temperatures but here in the Phoenix, AZ area, it’s heating up. While the rest of the country has been below normal temperatures, Phoenix AZ has been breaking records on our high temperatures. So it’s hot and the kids are hungry after school. Monday through Thursday after school we are in the house and back out for some kind of sport practice. Since we are strapped for time I started making these fruit smoothies and the boys (including my husband) just love them! I just mix all the ingredients in our Vitamix and it’s done in about 2 minutes. Plus, it’s a healthy snack before their sport practices.
Easy Fruit Smoothies:
1 cup frozen strawberries (no sugar added)
1/2 cup frozen blueberries (no sugar added) I also have used a mix berry bag of frozen fruit
1 medium banana
1/2 cup skim milk
2 oz. non-fat Greek yogurt (or regular plain yogurt)
Add all of these items to your blender and blend. If it’s too thick, add a little water.
Feel free to add protein powder if you like.

When I said I was going to make coffee cake, my oldest son said he didn’t want to try it because it had coffee in it. I could not stop laughing because he is so literal all the time. After I stopped laughing, I said it’s called coffee cake because the cake compliments the coffee. It’s never a dull moment in this house of boys 🙂 My oldest was still very shocked I was making this because only my husband likes coffee (still can’t choke down a cup). I told him to just to try the cake and let me know what you think. Well, can I say it was gone in two days!! Now a couple of pieces went to friends who came over but everyone loved the cake. My husband even requested that I make it again soon!
Quick and Easy Coffee Cake
Recipe from Lil’ Luna
Ingredients:
- 1 cup oil
- 2 eggs beaten
- 1 tsp vanilla
- 1 cup milk
- 1 cup sugar
- 3 cup flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cup brown sugar
- 2 tsp cinnamon
- 1/2 cup margarine melted
Directions:
- In a large mixing bowl. combine oil, eggs, vanilla and milk together.
- In a medium bowl, blend together sugar, flour, baking powder and salt.
- Combine egg mixture with flour mixture. Pour half the batter into a 9×13 pan.
- In a medium bowl, prepare streusel by combining brown sugar and cinnamon.
- Sprinkle half of streusel on top of the batter. Top with remaining batter and then sprinkle the remaining streusel on top.
- Drizzle with melted margarine.
- Bake, uncovered at 350 for 25-30 minutes. Makes 18-24 servings

Usually Skinny recipes don’t appeal to me. It’s not that I don’t like them but I try to eat in moderation whether it’s skinny or not. But my husband was bugging me to make a few skinny recipes. He’s trying to lose a couple of pounds I think 🙂 I told him if he would stop snacking on pretzels and cookies at night the couple of pounds would come off. He agreed but still wanted skinny recipes.
Since Kung Pao Chicken is one of his favorite Chinese take out meals I decided to try this recipe I found on Cookinglight.com. I was a little worried because sometimes the skinny recipes come up a little short on favor. This one did not. In fact, next time I think I will add just a little extra crushed red pepper. The recipe called for 1 to 1 1/2 teaspoons and I added 1 teaspoons because the boys. Everyone loved it! This recipe is simple to prep before and literally only takes a 15-17 minutes to make after the preparation is done. We all agreed this one is a keeper!
Skinny Kung Pao Chicken
Yields about 4 to 6 servings (depending on who is serving:) )
Ingredients:
- 2 tablespoons dark sesame oil
- 1 cup chopped onion
- 2 garlic cloves, minced
- 1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
- 3/4 cup water
- 3 tablespoons lower-sodium soy sauce
- 2 teaspoons cornstarch
- 1 teaspoon brown sugar
- 1/2 teaspoon bottled minced ginger
- 1 to 1 1/2 teaspoons crushed red pepper
- 1 cup thinly sliced red bell pepper (about 1 large pepper)
- 1 cup snow peas, trimmed
- 2 tablespoons chopped unsalted, dry-roasted peanuts
Directions:
- Heat sesame oil in a large skillet over medium-high heat. Add onion to pan; sauté 3 minutes or until softened. Add garlic; sauté 30 seconds, stirring constantly. Add chicken; sauté 3 minutes or until chicken begins to brown.
- Combine 3/4 cup water and the next 5 ingredients (through crushed red pepper), stirring with a whisk until sugar dissolves. Add water mixture to pan; bring to a boil. Add bell pepper and snow peas to pan; cook for 2 minutes or until vegetables are crisp-tender and sauce thickens. Sprinkle with nuts.

Usually I am not a big fan of baked goods that are “healthier” for you. It always seems like something is missing to me. Well, this recipe will not disappoint at all. I came across the recipe on Sally’s Baking Addiction (I just love her blog) and the pictures made the muffins look so good I thought I would give them a taste.
I made the muffins without my family knowing they were from a skinny recipe. As they were baking they absolutely smelled delicious! The real taste test would be my boys and if they ate them. Well, my boys crushed them and I mean crushed them. I think the twelve muffins were gone within 48 hours. After they were all gone I finally told everyone that these muffins were from a skinny recipe… they asked me to make them again soon 🙂 That’s a winner!!
Recipe from Sally’s Baking Addiction
Yields a dozen muffins
Ingredients:
- 3/4 cup (133g) unsweetened applesauce
- 1/2 cup (100g) granulated sugar
- 1/4 cup (85g) honey
- 2 large egg whites (or 1 large egg)
- 3/4 cup (183g) vanilla Greek yogurt (or regular yogurt, plain or vanilla)
- 2 teaspoons vanilla extract
- 1/2 cup (62g) all-purpose flour
- 1/2 cup (64g) whole wheat flour
- 1/2 cup (64g) unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup (90g) mini chocolate chips, plus a few more for sprinkling on top
Directions:
Preheat oven to 425F degrees. Spray 12-count muffin pan with nonstick spray. Do not use liners.
In a large bowl, combine applesauce, sugar, honey, egg whites, greek yogurt, and vanilla extract. Whisk them all together until smooth, with no yogurt lumps remaining.
Sift* the flours, cocoa powder, salt, baking soda, and baking powder together. Slowly stir in the wet ingredients, being careful not to overmix. Get any dry pockets of flour out. Fold in the mini chocolate chips. The batter will be a little chunky. This is ok.
Divide the batter evenly among the muffin cups – fill them all the way to the top if you can. Bake for 5 minutes at 425F. Keeping the muffins in the oven, reduce the temperature down to 375 and continue to bake for 13 more minutes. Insert a toothpick into the center of one muffin. If it comes out clean, they are done. If not, bake for only 2 more minutes.
Remove from the oven and allow to cool for 3 minutes in the pan, then transfer to a wire rack to cool completely. Makes 12 muffins. Muffins stay fresh in an airtight container at room temperature for up to 5 days. Muffins freeze well up to 3 months: heat up for 45 seconds to thaw.
