Tuesday Cook Off ~ Snickerdoodle Bread

Since my boys love cinnamon rolls and always ask for me to make them, I thought I would switch it up a bit and make Snickerdoodle bread.   I love making bread.  I like making any kind of bread really.  I am not picky 🙂  Bread is such an easy snack for the boys to grab and it wraps nice to bring in their school lunches too.   Even my husband likes to bring bread to work for a snack.   So this recipe of Snickerdoodle bread did not disappoint us either.   It was really good and just the right amount of cinnamon.   Now this recipe is for 5 mini loaves or two 9 x 5 loaves.   I did cut the recipe in half and make just one 9 x 5 loaf.  Needless to say, the loaf was gone in about 36 hours!

Recipe from: Barbara Bakes


  • 3 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup butter, softened
  • 2 cup sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 cup sour cream
  • 1 1/2 cup cinnamon chips (1 pkg. Hershey’s)
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • 2 teaspoons cinnamon


  1. Preheat oven to 350º Spray the bottom of five mini loaf pans (5 3/4 x 3 1/4 x 2 ¼) with cooking spray with flour.
  2. In a medium bowl, whisk together 3 cups flour, baking powder, salt and cinnamon. Set aside.
  3. In a large mixing bowl, cream together butter and 2 cups sugar, until fluffy, about two minutes. Add eggs one at a time mixing well after each addition. Add vanilla and sour cream and mix to combine. Add flour mixture and mix just until combine. Do not overmix.
  4. Coat the cinnamon chips with 2 tablespoons flour and stir into batter.
  5. Spoon batter into greased pans (Don’t fill more than 2/3 full.)
  6. Combine 2 tablespoons sugar and 2 teaspoons cinnamon and sprinkle over the top of the batter in the pans.
  7. Bake for 35 to 40 minutes until a toothpick inserted into a crack in the center of the loaf comes clean. Remove from oven and let cool 10 minutes before removing from pan. Remove from pan and let cool completely before serving.

You can also make this in two 9×5 loaf pans. Bake at 350º for 60 to 70 minutes or until a toothpick inserted into a crack in the center of the loaf comes out clean.  If you cut the recipe in half and make only one 9 x 5 loaf, bake time will be about 50-55 minutes.

Early wake up call :)

Early wake up call 🙂

The alarm went off at 5:00 am on Sunday morning.  I was so tempted to hit snooze because our pittie baby kept us up all night.   But instead I hit the alarm off and started to get ready for the half marathon I was about to run in two hours.   This wasn’t my first half marathon, in fact, I have run more than a dozen of them in the last 3 years but this race was different…I was missing my running partners, both of them!  If you have never run a race before your running partner is pretty important if you keep the same pace and push each other.   This race I was going solo.

After I was dressed and ate my Cheerios with banana and had everything packed for the race, I woke my husband so he could drop me off by the bus drop off.  I was meeting some girls at 6:20.   Just enough time to get to the start line and make a last minute bathroom break before the start at 7 am.   By this time I was starting to get nervous…no running partner.  UGH!  I had my new Garmin Forerunner 410 (a present from my husband) ready for action and had the virtual partner set for an 8:20 pace.  Last year I ran this same race at an 8:24 pace and a time of 1:50:02.   With or without a partner, I wanted to beat last years time.

It was 6:58 and I finally shed my jacket and tossed it into the donation pile.  I double checked my Garmin watch and made sure that my virtual partner was set.   Virtual partner don’t fail me now 🙂  I looked at my group and wished everyone luck and at 7 am we are off and running!

So I am not going to bore you with mile-by-mile detail but I would like to say that I love the sport of running and all the people.   Most people think that runners are a different breed but us runners stick together and encourage each other out there running.  By mile 3 I noticed a girl keeping the same pace as me.   Either I was in front of her or she was in front of me.   I decided this would be my new running partner:)  I just needed to stick by her.  By mile 12 we were still neck in neck and even smiling to each other to encourage each other.  We had just finished a hill and were both about to stop but we just looked at each other and said we got this.   When we crossed the finish line together we both turned to each other and automatically hugged each other and congratulated each other.   We even had the photographer take our picture together.  We told each other thank you and walked away.   It didn’t dawn on me until I was telling the story to my husband that I never even got her name.  So runner with the bib # 1311, thank you thank you thank you and what is your name?

So how do you think I did?  I beat last years time!! Yea!!  My results were 1:49:11 with an 8:20 pace.

Overall I was 158 out of 2097 runners.  In my age group (40-44) I finished 27 out of 370.   Not too bad for running solo!

P.S.  I love my new Garmin Forerunner 410!  Do you have one?  Do you just love it?  If not, what running watch do you have?

So I wanted to do a fun project with my 7 year old for St. Patrick’s Day and came across this cute idea on Pinterest.   My 7 year old loves baking with me.   Well, okay maybe he actually doesn’t like the baking as much as he likes to be in control of my Kitchenaid Stand Mixer.   He is obsessed with it 🙂  Anyway, I thought this would be a cute and easy project for mom and son while dad was at softball for the night.   It didn’t include the Kitchenaid stand mixer but he was game!  It’s St. Pat’s Twisted Shamrocks!  We also were creative and made them into spring flowers.   I hope you enjoy making these with your little one and much as I did!

Here is what you will need: baking sheet, foil or parchment paper, bag of small twisted pretzels, bag of pretzels sticks, bag of Hersey’s Kisses and one bag of M & M’s.   Heat oven at 200 degrees before you start.  Then assemble 3 pretzels like the picture below.

Then you will place a Hersey Kisses in the middle of the pretzels.   Do this until your baking sheet is full with pretzels.

Place in the oven for 4 minutes until the chocolate kiss gets soft.  Then remove from the oven and place the pretzel stick in the center of the kiss for the stem and press down.   If the pretzels slide out of place, gently push them back toward the center.  Then you will want to place the M & M on top of the pretzel stick -you want the Kiss to moosh around the pretzels, cementing them together.

You will have to let them harden for about 30 minutes.   After they have harden, you can enjoy!   My son and I made up 6 spring flowers for his teacher too.   We used yellow and orange and red M & M’s.  I think if you buy the Easter color M & M’s it would look even better.  But we worked with what we had on hand.  Here is a picture of my son’s spring flower.
