My Baby Pajamas Summer SaleHi Everyone!  I know it’s been awhile since I have posted on my blog.   All I can say is things became really hectic here at home.   The end of the school year is always busy here and all sports are wrapping up because no one in their right mind plays sports in Phoenix in the middle of summer 🙂   My oldest graduated from 8th grade is now officially a freshmen!  There have been parties galore and a lot of needed down time.   But enough about my family and me…how has everyone’s summer been going?  If you are somewhere hot, I hope you are cooling off and if you are somewhere cool…well, I am jealous.

Random Thoughts of the DayDo you ever just sit around and let your mind race with your thoughts?   Are your thoughts all over the map like mine?  Is it because I am a mom and wife and never have a moments peace.   I feel like my thoughts are all over the spectrum.

Here are my 10 random thoughts for day:

  • I love to cook and even like to bake now.   But I hate to make chocolate chip cookies.   It’s not like they are bad, my family loves them and request them all the time.   I just hate baking them.  Is that weird?
  • I hate coffee.  I mean hate the taste.  Actually makes me gag.   What to hear something strange?  I LOVE the smell of coffee.   When my husband is making his coffee in the morning I love to be around just so I can smell it.
  • Since you now know I hate to drink coffee, I could sure use a Diet Coke.  Yes, this is my means of caffeine.   I drink only one a day 🙂
  • I should probably get the kids up for school or we will be late.  It’s almost 7 am and we are out the door before 8 am.
  • I would like to blow off work today and run by myself.  Without my dog!   I love my dog, Chance, but sometimes it’s nice to go on a long run alone!
  • I wish I had straight hair naturally.  Well, maybe I don’t but I wish I could snap my fingers and it would be blown out straight.  People with straight hair have no idea how long it takes us curly hair people to have their hair.
  • Later today we have a baseball game, track meet and my husband’s softball game.   I wish I could come home and just sleep. Is that bad?  Don’t worry, I will be there cheering my boys on.
  • What’s for dinner??  I should really think about this now before it’s too late.   Oh hell, it’s Smash Burgers tonight!  My boys will be so happy.
  • Today is hump day! Yea!  Friday can’t get here fast enough.
  • My Dyson vacuum has been in the shop for repairs for a week.  Boy, my house could use a cleaning.   Not looking forward to that this weekend 😦

What is going through your mind at this moment?

Tuesday Cook Off ~ Chocolate Chocolate Chip Banana Bread

My family and I like bread.  Okay, we love bread.  It’s one of my guilty pleasures.   I would much rather have banana bread or cinnamon bread over say chocolate cake with icing.  Not much of an icing fan in this house.  My whole family scrapes off icing all the time.   In fact, sometimes I feel bad.  We will go to one of my sons friends birthday parties and you can tell the mom spent a lot for this special cake and my boys will either say no thank you to cake or scrape the icing in a pile on their plate.  Every time they do this, a mother will say to me, “The icing is the best part”.   Well, not to us.

Now that I have rambled on about icing and how we dislike it, I am totally off subject of this wonderful bread.   When I found this recipe I just had to try it because mixing chocolate, chocolate chips and bananas in bread…what could be better!  This recipe calls for sour cream that I think just makes this bread that much better.   It is so rich and moist; I promise you will love it 🙂

Here is the recipe:

Yields: 1 Loaf

  • 1 stick of salted butter, softened to room temp.
  • ½ cup sugar
  • 1 egg
  • 2 large ripened bananas mashed ( or 2.5 small bananas)
  • 1 tsp. vanilla
  • 1 cup flour
  • 1 tsp. baking soda
  • 2 Tbl. cocoa powder
  • ½ cup of sour cream
  • 1 cup of mini chocolate chips (regular chocolate chips work too)
  • optional ½ cup of chopped walnut.
  1. Preheat over to 350 degrees.
  2. Lightly grease a 9×5 loaf pan, or 2 mini pans with non-stick spray.
  3. In a large bowl, cream butter and sugar together. Stir in egg, mashed bananas, sour cream, and vanilla until well blended.
  4. Add baking soda, cocoa, and flour.
  5. Mix everything until well incorporated (about 3 minutes in a Kitchenaid mixer).
  6. Add chocolate chips and nuts (if applicable).
  7. Pour batter into loaf pan(s) and bake for 50 minutes – 1 hr.
  8. Insert a tooth pick into the center of the loaf and check to see if it comes out clean when you pull it out.
  9. Remove from heat and allow bread to rest in the loaf pan for 10 minutes.
  10. Invert the loaf pans onto a cooling rack. Enjoy warm or cold.

Welcome to My Baby Pajamas Tuesday Cook Off!  This week I am featuring Cheese and Chicken Stuffed Shells.   It really is such a simple recipe and not that time consuming for stuffing shells.  In fact, my husband helped me with this dish and we had a great time making it together 🙂  It could have been the wine we were drinking while we were cooking but nevertheless we had fun!

For the sauce, I used my homemade sauce I make and freeze.   I usually make a big batch and then freeze for recipes like this one.   I will share my sauce recipe in an upcoming post.   It’s not a family recipe at all because my mom still hasn’t shared it with me !!  She says it’s not written down it’s all in her head.  Anyway, I hope to get my hands on that recipe soon.   I think using a homemade sauce just adds to the recipe.

Here is the recipe:

12 jumbo pasta shells
1 1/2 c pasta sauce
2 large egg whites, gently beaten
1 1/2 c part skim ricotta cheese
4 oz. chicken, cooked and diced
1 c frozen spinach (chopped) thawed (drain all excess water)

2 tsp garlic powder
1 tbsp oregano
1 tbsp chopped basil
3/4 c part-skim mozzarella cheese, shredded
1/3 c grated parmesan cheese

Preheat oven to 350
Cook shells in boiling water according to the directions on box.
Rinse with cold water and set aside for later use.

Lightly spray a 9×13 pan with cooking spray and spread 1/2 c of pasta sauce evenly over the bottom of the pan. Set aside.

For filling: Stir together egg whites, ricotta, chicken, spinach, garlic powder, basil, and seasoning. Stir in 1/4 c of mozzarella cheese and parmesan cheese.

Fill each shell with mixture and place filled shells in the baking dish on top of the sauce. Spread remaining sauce on top. Sprinkle with remaining cheese and salt and pepper to taste. Bake for 30 minutes.

My Baby Pajamas March Freebie Friday

February 20, 1993, we were both just 23 years old.   What were we thinking getting married so young?   Well, we were in love!  We met in college through a mutual friend and knew we were going to be together forever.   Was it love at first sight…hell no!  But it developed into the kind of love that stayed up late talking and laughing until the sun came up.  It still is on some occasions.  Not as much as we like because a) we have two boys b) we have to work in the morning c) we are old 🙂  So what are the secrets to our happy marriage?

1. Communication:  Talk to your spouse about something other than work, money, kids, and the relationship.  This is very important and know we all forget to communicate with each other.   When the open communication is gone, the walls go up.  Once the walls go up, it’s hard to break them down.   Surprise your spouse tomorrow with a 10-minute talk without the kids around.   Ask how they are doing.

2.  Let go of the past, learn to forgive:  Letting go of the past is key to a happy marriage.   Why waste energy and time trying to change something that has already happened.   Focus on the now, not the then!

3.  Affection:   Men crave affection more than women.  Surprise!!  Men look for affection that is non sexual and want to feel special and wanted.   Women, however, don’t crave this as much because we get this feeling from our girl friends.   Make sure to take the time to make your husband feel special.   Take the time to text him or call him at work just to say hi and I love you.   My husband and I now do this on a daily basis.   Seems stupid but it’s special every time.

4.  A crisis doesn’t mean the marriage is over:  Crises are like storms: loud, scary and dangerous. But to get through a storm you have to keep driving. A crisis can be a new beginning. It’s out of pain that great people and marriages are produced.

5. Laugh and laugh a lot: Make the time for alone time in this crazy world and just laugh with each other.  Watch a funny movie together.   Talk about something silly but just remember to laugh!

6.  Marry your best friend 🙂

My Baby Pajamas recipe of the week is Cinnamon Swirl Banana Bread.  This past week after guest had left from the holidays, I noticed I had bananas that were just too ripe.   So the best thing to do with too ripe bananas is make banana bread!!  My youngest son loves banana bread 🙂  He was excited that I was going to make it for him.   But I wanted to try something new.  I went to Pinterest and found this fabulous recipe!  The cinnamon was not over powering at all.   I will say that if you are going to make it and not eat the whole loaf in one sitting, use plastic wrap to store instead of a air tight container.  We found that the cinnamon was a little soggy the next day.
