My family and I eat a lot of chicken. So I am always looking for new ways to marinate chicken to grill. We grill often here in Phoenix because the weather is nice plus it’s easy clean up. I love that! Not only do my family and I like chicken but we also love Thai food. This recipe was simple and I mean simple. It’s only 4 ingredients. My husband absolutely loved the recipe and has asked for me to make it again already (I just made it on Saturday)!
Here is the recipe:
Cilantro Thai Grilled Chicken (serves 4)
2 garlic cloves, coarsely chopped
1/2 cup cilantro
2 tablespoons asian fish sauce or 1 tablespoon of GF soy sauce
1 tablespoon toasted sesame oil
Place all the ingredients above in a food processor and process until smooth.
4 boneless skinless chicken breasts
Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
Prepare your grill or broiler. Cook until temperature registers 165F on the meat thermometer. Let the chicken breasts rest for 5 minutes before serving, this prevents the meat from drying up.

My Baby Pajamas decided this week we would focus on man’s best friend. We wanted to share one of our recipes for homemade dog treats. Our pitbull mix has sensitive skin and noticed that when we make him homemade treats his skin is better and he doesn’t itch as much. We have to take care of our four legged family members too 🙂 So a few weekends ago, my sons and I researched for an easy and simple homemade dog treat. Well, we found one and our dog Chance just loves them. After baking, you can store them in an airtight container for up to two weeks. The parsley in these treats makes them a secret breath freshener for your four legged best friend.
Here is the recipe:
Ingredients:
- 1 banana, peeled
- 1 cup oat flour
- 2/3 cup rolled oats
- 1/2 cup dried parsley
- 3 tablespoons peanut butter
- 1 egg, beaten
Preheat oven to 300°F. Put banana in a large bowl and use a spoon or potato masher to mash it thoroughly. Add oat flour, oats, parsley, peanut butter and egg and stir well to combine. Set aside for 5 minutes.
Roll mixture into 24 balls, using about 1 tablespoon dough for each; transfer to a large parchment paper-lined baking sheet as done. Use the back of a spoon or the heel of your hand to press each ball into a (1 1/2- to 2-inch) coin. Bake until firm and deep golden brown on the bottom, 40 to 45 minutes. Set aside to let cool completely.
Storage note: It’s best to store these in an airtight container in the refrigerator. Or, freeze them to give to your pal later; just be sure to thaw the treats before handing them out.

My Baby Pajamas recipe of the week is Crock Pot Honey Chicken. I just love my crock pot. Especially being a working mom, I can put it all together in the morning, turn on the crock pot, go to work and when I get home, dinner is ready! I love that 🙂 My boys also love any kind of chicken so I came across this honey chicken recipe and had to try it. Plus, it was so easy to make and so good! My Baby Pajamas recipe of the week is Skillet Baked Ziti with Italian Sausage. I found this recipe on Pinterest (by the way, I just LOVE Pinterest) and my husband asked me to make some good old fashion comfort food. It has been cold here in Phoenix, AZ and comfort food hits the spot! So I went to Pinterest and started searching around. He then asked if I would make my baked ziti. Being Italian, I have all these old family memories of eating mostaccioli at holiday times and images of pasta noodles went flashing through my head. I wanted to try something different and so I found this great skillet baked ziti. I can honestly say I don’t know if I will ever make baked ziti the old fashion way again. This recipe was delicious! My husband loved it (and already asked me to make it again) and my boys loved it too.

My Baby Pajamas recipe of the week is Cinnamon Swirl Banana Bread. This past week after guest had left from the holidays, I noticed I had bananas that were just too ripe. So the best thing to do with too ripe bananas is make banana bread!! My youngest son loves banana bread 🙂 He was excited that I was going to make it for him. But I wanted to try something new. I went to Pinterest and found this fabulous recipe! The cinnamon was not over powering at all. I will say that if you are going to make it and not eat the whole loaf in one sitting, use plastic wrap to store instead of a air tight container. We found that the cinnamon was a little soggy the next day.

My Baby Pajamas recipe of the week is Nana’s Chicken Matzo Ball Soup. It’s winter time and soup is one of our favorite recipes during this time of the year. My family loves soup but I would have to say their favorite is Matzo Ball soup. So when I saw this recipe on Pinterest, I just had to try it. Let me tell you, it’s outstanding!! It was so good, I am making a couple of pot fulls for my relatives to freeze and reheat 🙂 Plus, I felt this recipe was really easy to make. You have to let the broth simmer for a couple of hours but besides that, it’s easy! I hope you share this recipe because it’s a keeper 🙂

My Baby Pajamas recipe of the week is Italian sausage and tortellini soup. I discovered this recipe because my husband loves to put his tortellini in broth. So it got me to thinking, there has to be a way to make this a hearty meal to fill up 3 boys in the house. I found this recipe on Allrecipes.com and it was a huge hit in the house. This soup will be a favorite, I promise.

This recipe is from Allrecipes.com. I did change the recipe a little to make it more hearty of a meal. I added 3 hot Italian sausage links, instead of fresh tomatoes I used 2 15 oz. cans of diced tomatoes and I added a 15 oz bag of tortellini. Serve this with a salad and bread and you have a full meal. Enjoy!!
My Baby Pajamas recipe of the week is Chicken Pot Pie Soup. It is starting to get cool everywhere (except for maybe here in Arizona) and soup is the perfect fall dinner. My boys and husband love soup when it starts getting cool out. We make a big salad and cup up some french bread and you have yourself an easy dinner that everyone will enjoy!
