Tuesday Cook Off ~ Chocolate Chip Blondies

Today on Tuesday Cook Off I am featuring a Chocolate Chip Blondies.   If you are a chocolate chip fan and want a new twist, the blondie is a winner.   What is a blondie? Blondies are the lighter colored counterpart to brownies. They’re dense, chewy bar cookies that have a fudgy texture similar to that of a brownie.  In other words, it’s delicious!

I really enjoyed this recipe and it made a small batch, which I like because then the blondies stay fresh.  I was very surprised that my husband really enjoyed the blondies.   He is not much of a dessert person and would much rather have one of my homemade pretzels or cinnamon rolls.  But to my surprise he really enjoyed them and already asked for me to make them again soon.

Chocolate Chip Blondies

Recipe Yields 12 Blondies

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk chocolate chips
  • 3/4 cup chopped walnuts (optional)

Preparation

  1. Preheat oven to 375°F. Mist a 12-cup muffin tin with nonstick cooking spray or line with paper muffin cups. In a small bowl, mix flour, baking powder and salt; stir with a fork to combine.
  2. Melt butter in a medium saucepan over low heat. Remove from heat and stir in brown sugar. Let cool slightly, then stir in egg and vanilla until smooth. Stir in flour mixture, then chocolate chips and nuts, if using.
  3. Portion out a little less than 1/4 cup batter into each muffin cup and smooth tops with a small spatula. Bake until just set, 15 to 17 minutes. Let blondies cool completely on a wire rack before removing from pan.

Tuesday Cook Off ~ Brownie Cupcakes with Cookie Dough Icing

I am not an icing person at all but I just had to try these cupcakes.  My whole family loves brownies and my oldest has an obsession with cookie dough 🙂  Who doesn’t like to eat raw cookie dough very once in a while?   I will admit that these cupcakes are very sweet!  Eating just one was enough for me.   I halved the recipe because I felt that these would taste better when fresh.   The half batch made 6 cupcakes and was just perfect.  Everyone had one the day they were baked and the boys each had one the next day.   I could tell the icing wasn’t as fresh the next day but the boys said it tasted great!  The icing is an egg free icing too.  You could eat it right out of the bowl.  In fact, you just might so you better make a double batch of the icing 🙂

Recipe from: Cooking Classy

Yields: 12 cupcakes

Ingredients

    • 1 1/4 cups all-purpose flour
    • 1/4 tsp baking powder
    • 1/4 tsp salt
    • 1 cup granulated sugar
    • 1/2 cup packed light-brown sugar
    • 1/2 cup + 2 Tbsp cocoa powder
    • 3/4 cup butter, melted
    • 2 large eggs
    • 1 1/2 tsp vanilla extract
    • 2 Tbsp milk
Cookie Dough Frosting
  • 10 Tbsp salted butter, at room temperature
  • 1/2 cup packed light-brown sugar
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp molasses
  • 2-3 Tbsp cream or half and half
  • 1/2 cup all-purpose flour
  • 3/4 cup mini semi-sweet chocolate chips

Directions

Preheat oven to 350 degrees. In a mixing bowl whisk together flour, baking powder and salt, set aside. In a separate mixing bowl, whisk together granulated sugar, light-brown sugar and cocoa powder. Pour in melted butter and use a wood spoon to stir until combine. Mix in eggs and vanilla extract. Stir in milk. Add dry ingredients and mix just until combine (batter will be thick).

    Divide batter among 12 paper lined muffin cups filling each about 2/3 full (about 1/4 cup batter in each). Bake in preheated oven 16 – 20 minutes (lesser for gooier brownies). Allow to cool in muffin tin several minutes before transferring to a wire rack to cool. Cool completely then frost with Cookie Dough Frosting. Store in an airtight container.

    Cookie Dough Frosting
    In a mixing bowl, using an electric hand mixer, whip together butter and light-brown sugar until pale and fluffy, about 3 – 4 minutes. Mix in flour then add powdered sugar, vanilla, molasses and 2 Tbsp cream and blend together until smooth adding an additional 1 Tbsp of cream to thin if desired. Fold in chocolate chips.
    Note that if you want a pipe-able frosting you will have to leave the chocolate chips out then simply add some of them to the top for garnish, otherwise they’ll just get clogged in the piping tips.

    My family and I eat a lot of chicken.   So I am always looking for new ways to marinate chicken to grill.   We grill often here in Phoenix because the weather is nice plus it’s easy clean up.   I love that!  Not only do my family and I like chicken but we also love Thai food.  This recipe was simple and I mean simple.  It’s only 4 ingredients.   My husband absolutely loved the recipe and has asked for me to make it again already (I just made it on Saturday)!

    Here is the recipe:

    Cilantro Thai Grilled Chicken (serves 4)

    2 garlic cloves, coarsely chopped
    1/2 cup cilantro
    2 tablespoons asian fish sauce or 1 tablespoon of GF soy sauce
    1 tablespoon toasted sesame oil

    Place all the ingredients above in a food processor and process until smooth.

    4 boneless skinless chicken breasts

    Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
    Prepare your grill or broiler. Cook until temperature registers 165F on the meat thermometer. Let the chicken breasts rest for 5 minutes before serving, this prevents the meat from drying up.

    Tuesday Cook Off ~ Homemade Peanut Butter and Banana Dog Trea

    My Baby Pajamas decided this week we would focus on man’s best friend.  We wanted to share one of our recipes for homemade dog treats.   Our pitbull mix has sensitive skin and noticed that when we make him homemade treats his skin is better and he doesn’t itch as much.   We have to take care of our four legged family members too 🙂   So a few weekends ago, my sons and I researched for an easy and simple homemade dog treat.   Well, we found one and our dog Chance just loves them.   After baking, you can store them in an airtight container for up to two weeks.   The parsley in these treats makes them a secret breath freshener for your four legged best friend.

    Here is the recipe:

    Ingredients:

    • 1 banana, peeled
    • 1 cup oat flour
    • 2/3 cup rolled oats
    • 1/2 cup dried parsley
    • 3 tablespoons peanut butter
    • 1 egg, beaten

    Preheat oven to 300°F. Put banana in a large bowl and use a spoon or potato masher to mash it thoroughly. Add oat flour, oats, parsley, peanut butter and egg and stir well to combine. Set aside for 5 minutes.

    Roll mixture into 24 balls, using about 1 tablespoon dough for each; transfer to a large parchment paper-lined baking sheet as done. Use the back of a spoon or the heel of your hand to press each ball into a (1 1/2- to 2-inch) coin. Bake until firm and deep golden brown on the bottom, 40 to 45 minutes. Set aside to let cool completely.

    Storage note: It’s best to store these in an airtight container in the refrigerator. Or, freeze them to give to your pal later; just be sure to thaw the treats before handing them out.

    My Baby Pajamas recipe of the week is Crock Pot Honey Chicken.   I just love my crock pot.  Especially being a working mom, I can put it all together in the morning, turn on the crock pot, go to work and when I get home, dinner is ready!  I love that 🙂  My boys also love any kind of chicken so I came across this honey chicken recipe and had to try it.  Plus, it was so easy to make and so good!  Thank you Lovin’ From the Oven for the recipe

    My Baby Pajamas recipe of the week is Skillet Baked Ziti with Italian Sausage.   I found this recipe on Pinterest (by the way, I just LOVE Pinterest) and my husband asked me to make some good old fashion comfort food.  It has been cold here in Phoenix, AZ and comfort food hits the spot!  So I went to Pinterest and started searching around.  He then asked if I would make my baked ziti.   Being Italian, I have all these old family memories of eating mostaccioli at holiday times and images of pasta noodles went flashing through my head.  I wanted to try something different and so I found this great skillet baked ziti.   I can honestly say I don’t know if I will ever make baked ziti the old fashion way again.   This recipe was delicious!  My husband loved it (and already asked me to make it again) and my boys loved it too.

    Cinnamon Swirl Banana Bread

    My Baby Pajamas recipe of the week is Cinnamon Swirl Banana Bread.  This past week after guest had left from the holidays, I noticed I had bananas that were just too ripe.   So the best thing to do with too ripe bananas is make banana bread!!  My youngest son loves banana bread 🙂  He was excited that I was going to make it for him.   But I wanted to try something new.  I went to Pinterest and found this fabulous recipe!  The cinnamon was not over powering at all.   I will say that if you are going to make it and not eat the whole loaf in one sitting, use plastic wrap to store instead of a air tight container.  We found that the cinnamon was a little soggy the next day.

    Nana’s Chicken Matzo Ball Soup

    My Baby Pajamas recipe of the week is Nana’s Chicken Matzo Ball Soup.   It’s winter time and soup is one of our favorite recipes during this time of the year.   My family loves soup but I would have to say their favorite is Matzo Ball soup.   So when I saw this recipe on Pinterest, I just had to try it.   Let me tell you, it’s outstanding!!  It was so good, I am making a couple of pot fulls for my relatives to freeze and reheat 🙂  Plus, I felt this recipe was really easy to make.   You have to let the broth simmer for a couple of hours but besides that, it’s easy!  I hope you share this recipe because it’s a keeper 🙂
