Tuesday Cook Off ~ The Biggest Loser Salad and Dressing

Since I have been posting a lot of baking I decided to change it up a bit for this week.   This week I am featuring “The Biggest Loser” salad and dressing.   Now, the salad is really nothing different but the dressing is awesome.   It’s light and tangy and perfect for the summer.   My husband and I have been enjoying this dressing for about 2 months and I figured it was time to share.   I also believe the basil in the salad also gives it a nice favor.   We also add light feta cheese to our salad but it’s up to you.   This recipe is great for all those summer BBQ’s.

Ingredients: 

1 head of fresh lettuce 1/3 cup olive oil (for dressing)
1 cucumber 4 tbsp lemon juice (for dressing)
2 fresh in-season tomatoes 1 tsp honey (for dressing)
1/4 red onion salt and pepper, to taste
1 bunch fresh basil
Directions:
For the salad: wash and dry the lettuce. Tear it into bite-size pieces. Peel the cucumber and cut it into bite-sized bits. Wash the tomatoes and cut them into bite sized pieces. Peel the onion and slice it as thin as possible. Wash and chop the basil into large pieces.

In a large mixing bowl, combine the lettuce, cucumbers, tomatoes, onions and basil. Toss together so the ingredients are well mixed.

For the dressing: place the dressing ingredients in a container with a tight-fitting lid. Cover the container and shake vigorous.  Add the dressing to the salad, toss and serve immediately.

My family and I like bread.  Okay, we love bread.  It’s one of my guilty pleasures.   I would much rather have banana bread or cinnamon bread over say chocolate cake with icing.  Not much of an icing fan in this house.  My whole family scrapes off icing all the time.   In fact, sometimes I feel bad.  We will go to one of my sons friends birthday parties and you can tell the mom spent a lot for this special cake and my boys will either say no thank you to cake or scrape the icing in a pile on their plate.  Every time they do this, a mother will say to me, “The icing is the best part”.   Well, not to us.

Now that I have rambled on about icing and how we dislike it, I am totally off subject of this wonderful bread.   When I found this recipe I just had to try it because mixing chocolate, chocolate chips and bananas in bread…what could be better!  This recipe calls for sour cream that I think just makes this bread that much better.   It is so rich and moist; I promise you will love it 🙂

Here is the recipe:

Yields: 1 Loaf

Ingredients
  • 1 stick of salted butter, softened to room temp.
  • ½ cup sugar
  • 1 egg
  • 2 large ripened bananas mashed ( or 2.5 small bananas)
  • 1 tsp. vanilla
  • 1 cup flour
  • 1 tsp. baking soda
  • 2 Tbl. cocoa powder
  • ½ cup of sour cream
  • 1 cup of mini chocolate chips (regular chocolate chips work too)
  • optional ½ cup of chopped walnut.
Instructions
  1. Preheat over to 350 degrees.
  2. Lightly grease a 9×5 loaf pan, or 2 mini pans with non-stick spray.
  3. In a large bowl, cream butter and sugar together. Stir in egg, mashed bananas, sour cream, and vanilla until well blended.
  4. Add baking soda, cocoa, and flour.
  5. Mix everything until well incorporated (about 3 minutes in a Kitchenaid mixer).
  6. Add chocolate chips and nuts (if applicable).
  7. Pour batter into loaf pan(s) and bake for 50 minutes – 1 hr.
  8. Insert a tooth pick into the center of the loaf and check to see if it comes out clean when you pull it out.
  9. Remove from heat and allow bread to rest in the loaf pan for 10 minutes.
  10. Invert the loaf pans onto a cooling rack. Enjoy warm or cold.

In our house blueberry muffins are a big request from my husband and my youngest son.   My husband likes them so much he will even make a box of Jiffy blueberry muffins on his own.  GROSS!!  Anyway, I came across this recipe that has a crumb topping.   I just love crumb toppings!  Well, I just had to give it a try.   Also, these blueberry muffins are made with Greek yogurt that really makes these muffins moist.  I promise if you like blueberry muffins, you will LOVE these!  Enjoy baking 🙂

Here is the recipe:

 Yield: 2 1/2 dozen standard muffins

Ingredients

For the Batter:
    • 4 eggs
    • 2 1/2 C sugar
    • 1 C canola oil
    • 1 tsp vanilla
    • 2 C plain traditional Greek yogurt (I’ve never tried using fat-free and don’t know how it works)
    • 4 C AP flour
    • 1 tsp kosher salt
    • 1 tsp baking soda
    • 3 C fresh or frozen blueberries tossed with 1 tbsp of flour just before adding to the batter
For the Crumb Topping:
  • 3/4 C brown sugar
  • 1 1/2 C AP flour
  • 1/2 C butter, cut into small pieces
  • 2 tsp ground cinnamon

Instructions

  1. Preheat oven to 375 degrees
  2. Make crumb topping by combining all ingredients in a bowl and pinching with your fingers until the butter is fully incorporated and it looks like coarse sand. Set aside.
  3. Combine the eggs, sugar, oil, and vanilla; mixing until smooth.
  4. In a separate bowl combine the flour, salt and baking soda.
  5. Alternately add 1/3 flour and 1/3 yogurt to the sugar mixture and repeat, stirring just slightly between each addition. The key to moist muffins is to keep the batter from becoming over mixed. Only mix until no dry spots remain- there will be lumps and that’s okay.
  6. Gently fold in the blueberries, mixing only until they are evenly distributed.
  7. Scoop batter into muffin tin until 2/3 full. Spoon 1 1/2-2 tbsp of crumb mixture on top of each muffin (it will look like a lot of crumbs).
  8. Bake for 20-25 minutes or until the tops are golden and a toothpick inserted into the center comes out clean with only moist crumbs.

My family and I eat a lot of chicken.   So I am always looking for new ways to marinate chicken to grill.   We grill often here in Phoenix because the weather is nice plus it’s easy clean up.   I love that!  Not only do my family and I like chicken but we also love Thai food.  This recipe was simple and I mean simple.  It’s only 4 ingredients.   My husband absolutely loved the recipe and has asked for me to make it again already (I just made it on Saturday)!

Here is the recipe:

Cilantro Thai Grilled Chicken (serves 4)

2 garlic cloves, coarsely chopped
1/2 cup cilantro
2 tablespoons asian fish sauce or 1 tablespoon of GF soy sauce
1 tablespoon toasted sesame oil

Place all the ingredients above in a food processor and process until smooth.

4 boneless skinless chicken breasts

Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
Prepare your grill or broiler. Cook until temperature registers 165F on the meat thermometer. Let the chicken breasts rest for 5 minutes before serving, this prevents the meat from drying up.

This week My Baby Pajamas is featuring the famous Levain Bakery Double Chocolate Chip Cookie from New York (of course it’s a copy cat recipe so who knows if it’s the real thing).   But I will tell you this; these cookies are delicious!   The recipe makes about 12 of the giant double chocolate chip cookies.  However, I didn’t want to have these huge cookies lying around the house so I made the cookies smaller and reduced the cook time.  They turned out perfect!  The cookies are very rich cookies so I could not imagine having a huge cookie.   All I have to say is if you like double chocolate chip cookies, you definitely need to make these, your family will thank you 🙂

Here is the recipe:

Yield: 12 very large cookies
Ingredients:
1 cup (2 sticks) cold, unsalted butter, cubed
1¼ cup sugar
2 large eggs
½ cup dark cocoa powder
2¼ cups all-purpose flour
¼ tsp. coarse salt
1 tsp. baking powder
2½ cups semi-sweet chocolate chips

Directions:
Preheat the oven to 350˚ F.  Line baking sheets with parchment paper or silicone baking mats.  In the bowl of an electric mixer, combine the butter and sugar.  Beat together on medium-high speed until light and fluffy, 2-3 minutes.  Blend in the eggs one at a time, scraping down the bowl as needed.  Mix in the cocoa powder until well blended.  Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated.  Fold in the chocolate chips with a spatula.  Transfer the dough to a work surface and knead briefly by hand to be sure the ingredients are well combined.

Divide the dough into 4 ounce portions (or divide into 12 equal pieces).  Roll each portion of dough into a ball and flatten just slightly into a disc.  Place on the prepared baking sheets, a few inches apart.  Bake 16-20 minutes.  Let cool on the baking sheets 5-10 minutes, then transfer to a wire rack to cool completely.

To make 30 smaller cookies:  I measured about 2 to 2 1/2 tablespoons of cookie dough onto the baking sheet.  I then cooked the cookies about 12-14 minutes.  If you want the cookies gooey I would cook around 12 to 12 1/2 minutes.

Welcome to My Baby Pajamas Tuesday Cook Off!  This week I am featuring Cheese and Chicken Stuffed Shells.   It really is such a simple recipe and not that time consuming for stuffing shells.  In fact, my husband helped me with this dish and we had a great time making it together 🙂  It could have been the wine we were drinking while we were cooking but nevertheless we had fun!

For the sauce, I used my homemade sauce I make and freeze.   I usually make a big batch and then freeze for recipes like this one.   I will share my sauce recipe in an upcoming post.   It’s not a family recipe at all because my mom still hasn’t shared it with me !!  She says it’s not written down it’s all in her head.  Anyway, I hope to get my hands on that recipe soon.   I think using a homemade sauce just adds to the recipe.

Here is the recipe:

12 jumbo pasta shells
1 1/2 c pasta sauce
2 large egg whites, gently beaten
1 1/2 c part skim ricotta cheese
4 oz. chicken, cooked and diced
1 c frozen spinach (chopped) thawed (drain all excess water)

2 tsp garlic powder
1 tbsp oregano
1 tbsp chopped basil
3/4 c part-skim mozzarella cheese, shredded
1/3 c grated parmesan cheese

Preheat oven to 350
Cook shells in boiling water according to the directions on box.
Rinse with cold water and set aside for later use.

Lightly spray a 9×13 pan with cooking spray and spread 1/2 c of pasta sauce evenly over the bottom of the pan. Set aside.

For filling: Stir together egg whites, ricotta, chicken, spinach, garlic powder, basil, and seasoning. Stir in 1/4 c of mozzarella cheese and parmesan cheese.

Fill each shell with mixture and place filled shells in the baking dish on top of the sauce. Spread remaining sauce on top. Sprinkle with remaining cheese and salt and pepper to taste. Bake for 30 minutes.

Today’s Tuesday Cook Off, My Baby Pajamas is featuring pretzel bread.   As you know, my family is crazy for anything pretzel.  In fact, I am starting to run out of ideas featuring pretzels.  There is a steak house here in Scottsdale that makes the best pretzel bread.  One night my husband was craving it but wanted it for a sandwich…the pretzel bread sandwich was created.   I found this easy recipe for the pretzel bread and next thing I knew we had dinner.    You can also make these into pretzel sticks with butter. YUM!

Here is the recipe for the pretzel bread:

In the bowl of your stand mixer, mix together:

  • 1 tablespoon granulated sugar
  • 1 tablespoon active dry yeast
  • 1 1/2 cups warm water

Let sit about 5 min, until its foamy. Then add:

  • 2 Tablespoons olive oil
  • 2 teaspoons salt

Get the dough hook going and gradually add 4 C flour. Let the machine keep going until the dough looks a little bit shiny and totally flexible (about 4-5 min)

Let it rest in the bowl, covered with a towel for an hour, until doubled in size.

Divide dough into 6 for rolls, or two for baguettes and shape accordingly.. Let those chill out, covered while you get a large pot of water boiling with a hefty dose of baking soda. (about 1/2 C) . Preheat your oven to 375 and lightly coat a baking sheet with EVOO.

When the water is boiling, cut little slits in your rolls, then slip them into the baking soda bath :)

Flip at 2 min on the first side and take them out after 3-4 min. Oil them up with a little more olive oil and sprinkle with maldon (or coarse  sea) salt.

Bake until perfectly browned (12-15 min) and eat warm!

So I have to admit, I am becoming obsessed with cooking food in a muffin pan.   First, they are the perfect serving size if you are watching your food intake and second, they are so cute!   You have to agree they do make a cute meal 🙂   Anyway, I had been looking for a easy recipe for a chicken pot pie recipe and came across this recipe from quick-dish.tablespoon.com.   This recipe was so easy to make and so good.   I made them for dinner for the whole family and then had left overs for lunch.  I just love when that happens.   My husband absolutely just loved them.   He even had his left over chicken pot pie cold and said it was just as good cold.

By now you probably have figured out that my family loves pretzels.  If you follow us on Facebook, Twitter, and Instagram, you have seen many pictures of pretzels.  They LOVE pretzels.   They would have me make them every week.  So with that being said, I have tried many pretzel recipes.  But this one is my favorite.   This recipe is for 12 pretzels but most of the time I cut the recipe in half and only make six.   Pretzels taste so much better right from the oven 🙂  Also, I usually make 3 regular with salt and 3 with the cinnamon and sugar.    The picture is of one of each.

Here is the recipe:

2 cups milk
1 1/2 tablespoons (2 packets) active dry yeast
6 tablespoons brown sugar
4 tablespoons butter, melted
4 1/2 cups flour
2 teaspoons fine salt

1/3 cup baking soda
3 cups warm water
Coarse salt
8 tablespoons butter, melted in a shallow dish

Warm up the milk in the microwave or on the stove for just about one and a half minutes. It should be about 110º. If it’s too hot it will kill the yeast. You should be able to comfortably keep your finger in it. Stir in the yeast and let it sit for about 3 minutes. Add the butter and sugar. Add the flour about 1 cup at a time and the add the fine salt. Kneed for about 10 minutes with a stand mixer, or by hand. Put it in a greased bowl and cover with greased cling wrap. Let rise for 1 hour in a moist, warm place until doubled in size. Preheat the oven to 450º. Punch down dough and divide into 12 lumps (I like to divide it in half, then divide each half into three, and then divide each remaining one in half again). Roll them all out as thin as you can. Combine the warm water and baking soda in a wide bowl. Form the dough into pretzel shapes, then dip in the baking soda water. Place on a greased baking sheet and sprinkle with coarse salt. Bake for about 7-11 minutes or until browned. Dip each in the melted butter while hot. Serve with cheese sauce.
