Best Chocolate Chip Muffins

My oldest son just loves chocolate chip muffins.   They are probably his favorite out of all the muffins.  In fact, at the grocery store if he is along, he always ask for one.  Now he has food allergies and it’s harder for him to eat store bought food with paying some kind of price.  So we went searching for the best chocolate chip muffin recipe and I believe we found it.   We tried a few recipes and these seem to be our favorite.   The top is a little crunchy and it’s not too cake like in texture.   If you have a chocolate chip muffin recipe and you think it’s great, we would love for you to share.

Here is the recipe:

Yields 12 large muffins

Sift together and set aside:

2 1/2 cups flour
3 tsp baking powder

In the bowl of a stand mixer with the whisk attachment in place, whisk together on high speed until foamy and slightly stiffened.

2 eggs
1 1/4 cups sugar
2 tsp vanilla extract

Mix together in a measuring cup with a spout:

1/4 cup melted butter
1/4 cup vegetable oil

Slowly add the oil and butter mixture to the egg mixture in a slow stream as the mixer continues to whisk.
Mix together

1/2 cup whipping cream

1/2 cup milk
2 tbsp apple cider vinegar
Add slowly to the mixing bowl continuing to mix but at a reduced speed.
Fold in the dry ingredients by hand with a rubber spatula being careful not to over mix. Don’t worry about lumps in the batter, they are fine. When the dry ingredients are almost incorporated, gently fold in

1 1/2 cups semi-sweet chocolate chips

Spoon batter into well greased muffin tins, filling them to the top. If you like you can sprinkle about a teaspoon of sugar over the top of each muffin before baking.
Bake in a preheated 400 degree F oven for about 20 minutes or until a wooden skewer inserted into the center of a muffin comes out clean.

I was looking through my photos yesterday of recent recipes I have tried, made and wanted to feature on Tuesday Cook Off.  I thought I had narrowed it down to this awesome Cinnamon Coffee cake bread; then I made Parmesan Bread Knots with dinner last night.  This had to be the easiest recipe I have made and they were delicious!  My husband who likes to stay away from bread at night ate three!  These bread knots were that good.   The knots went great with our pasta with homemade gravy (sauce) and salad.   It was a perfect and easy meal.   I make my gravy in a huge pot and then freeze it for future use.  I promise to share that recipe soon too.  Doing this makes pasta night so easy plus it’s my youngest sons favorite meal so I try to make it every couple of weeks for him.

Here is the recipe:  Easy Parmesan Bread Knots

Ingredients
  • 1 tube (12 ounces) refrigerated buttermilk biscuits ( I used Walmart brand Refrigerated Buttermilk Biscuits)
  • ¼ cup canola oil
  • 3 tablespoons grated Parmesan cheese (I did use the green can stuff)
  • ½ teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley flakes
Instructions
  1. Roll each biscuit into a 12-in. rope and tie into a knot; tuck ends under. Place 2 in. apart on a greased baking sheet. Bake at 400° for 8-10 minutes or until golden brown.
  2. In a large bowl, combine the remaining ingredients; brush the warm knots with the mixture. Yield:10 knots.

Tuesday Cook Off ~ Cilantro Thai Grilled Chicken

My family and I eat a lot of chicken.   So I am always looking for new ways to marinate chicken to grill.   We grill often here in Phoenix because the weather is nice plus it’s easy clean up.   I love that!  Not only do my family and I like chicken but we also love Thai food.  This recipe was simple and I mean simple.  It’s only 4 ingredients.   My husband absolutely loved the recipe and has asked for me to make it again already (I just made it on Saturday)!

Here is the recipe:

Cilantro Thai Grilled Chicken (serves 4)

2 garlic cloves, coarsely chopped
1/2 cup cilantro
2 tablespoons asian fish sauce or 1 tablespoon of GF soy sauce
1 tablespoon toasted sesame oil

Place all the ingredients above in a food processor and process until smooth.

4 boneless skinless chicken breasts

Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
Prepare your grill or broiler. Cook until temperature registers 165F on the meat thermometer. Let the chicken breasts rest for 5 minutes before serving, this prevents the meat from drying up.

Welcome to My Baby Pajamas Tuesday Cook Off!  This week I am featuring Cheese and Chicken Stuffed Shells.   It really is such a simple recipe and not that time consuming for stuffing shells.  In fact, my husband helped me with this dish and we had a great time making it together 🙂  It could have been the wine we were drinking while we were cooking but nevertheless we had fun!

For the sauce, I used my homemade sauce I make and freeze.   I usually make a big batch and then freeze for recipes like this one.   I will share my sauce recipe in an upcoming post.   It’s not a family recipe at all because my mom still hasn’t shared it with me !!  She says it’s not written down it’s all in her head.  Anyway, I hope to get my hands on that recipe soon.   I think using a homemade sauce just adds to the recipe.

Here is the recipe:

12 jumbo pasta shells
1 1/2 c pasta sauce
2 large egg whites, gently beaten
1 1/2 c part skim ricotta cheese
4 oz. chicken, cooked and diced
1 c frozen spinach (chopped) thawed (drain all excess water)

2 tsp garlic powder
1 tbsp oregano
1 tbsp chopped basil
3/4 c part-skim mozzarella cheese, shredded
1/3 c grated parmesan cheese

Preheat oven to 350
Cook shells in boiling water according to the directions on box.
Rinse with cold water and set aside for later use.

Lightly spray a 9×13 pan with cooking spray and spread 1/2 c of pasta sauce evenly over the bottom of the pan. Set aside.

For filling: Stir together egg whites, ricotta, chicken, spinach, garlic powder, basil, and seasoning. Stir in 1/4 c of mozzarella cheese and parmesan cheese.

Fill each shell with mixture and place filled shells in the baking dish on top of the sauce. Spread remaining sauce on top. Sprinkle with remaining cheese and salt and pepper to taste. Bake for 30 minutes.

Today’s Tuesday Cook Off, My Baby Pajamas is featuring pretzel bread.   As you know, my family is crazy for anything pretzel.  In fact, I am starting to run out of ideas featuring pretzels.  There is a steak house here in Scottsdale that makes the best pretzel bread.  One night my husband was craving it but wanted it for a sandwich…the pretzel bread sandwich was created.   I found this easy recipe for the pretzel bread and next thing I knew we had dinner.    You can also make these into pretzel sticks with butter. YUM!

Here is the recipe for the pretzel bread:

In the bowl of your stand mixer, mix together:

  • 1 tablespoon granulated sugar
  • 1 tablespoon active dry yeast
  • 1 1/2 cups warm water

Let sit about 5 min, until its foamy. Then add:

  • 2 Tablespoons olive oil
  • 2 teaspoons salt

Get the dough hook going and gradually add 4 C flour. Let the machine keep going until the dough looks a little bit shiny and totally flexible (about 4-5 min)

Let it rest in the bowl, covered with a towel for an hour, until doubled in size.

Divide dough into 6 for rolls, or two for baguettes and shape accordingly.. Let those chill out, covered while you get a large pot of water boiling with a hefty dose of baking soda. (about 1/2 C) . Preheat your oven to 375 and lightly coat a baking sheet with EVOO.

When the water is boiling, cut little slits in your rolls, then slip them into the baking soda bath :)

Flip at 2 min on the first side and take them out after 3-4 min. Oil them up with a little more olive oil and sprinkle with maldon (or coarse  sea) salt.

Bake until perfectly browned (12-15 min) and eat warm!

My Baby Pajamas recipe of the week is Skillet Baked Ziti with Italian Sausage.   I found this recipe on Pinterest (by the way, I just LOVE Pinterest) and my husband asked me to make some good old fashion comfort food.  It has been cold here in Phoenix, AZ and comfort food hits the spot!  So I went to Pinterest and started searching around.  He then asked if I would make my baked ziti.   Being Italian, I have all these old family memories of eating mostaccioli at holiday times and images of pasta noodles went flashing through my head.  I wanted to try something different and so I found this great skillet baked ziti.   I can honestly say I don’t know if I will ever make baked ziti the old fashion way again.   This recipe was delicious!  My husband loved it (and already asked me to make it again) and my boys loved it too.
