Tuesday Cook Off ~ 12 Inch Chocolate Chip Cookie Cake

In one month we celebrate three birthdays out of four in the house.   It’s a busy month!  The problem is making the birthday cake or cupcakes.   None of us like icing and it looks dumb to just write “Happy Birthday”  on a non iced cake.   So my oldest son decided we should do big cookies like you buy in the store.   Since my oldest son has food allergies and does better with homemade items, we decided to look for a good 12 inch cookie recipe.   By the way, this was not as easy as you would think but I think we found a winner.

After trying a couple of recipes, this was the winner.  My boys said it was better than the store bought cookie. YEA!

Recipe serves 10-16

Ingredients
  • 2 1/2 cups all-purpose flour (11 1/4 oz)
  • 1/2 tsp baking soda
  • 1 tsp salt**
  • 8 oz unsalted butter (or use 4 oz butter and 1/2 cup shortening for 1 cup total)
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1 bag semi sweet regular or miniature size chocolate chips (2 cups)
  • 1 regular size bag (about 1.5 oz) plain M&M’s or, if you live in the UK, smarties
Instructions
  1. Preheat oven to 300° F. Line a 12 inch round pizza pan with a circle of parchment or non-stick foil. Alternatively, you can make your own pizza pan by molding non-stick foil into a giant 12 inch circle.
  2. Mix flour, baking soda and salt together; set aside.
  3. Cream butter and both sugars by hand or with an electric mixer. Beat in the eggs and vanilla. When well mixed, add flour mixture and stir until blended Fold in chocolate chips.
  4. Put all the batter in the pan and press it into a circle. Stop the circle about 1 ½ to 2 inches from the rim. Press M&M’s decoratively into top.
  5. Bake on center rack for 32-35 minutes or until cookie is golden around edges and appears set.

Tuesday Cook Off ~ Cilantro Thai Grilled Chicken

My family and I eat a lot of chicken.   So I am always looking for new ways to marinate chicken to grill.   We grill often here in Phoenix because the weather is nice plus it’s easy clean up.   I love that!  Not only do my family and I like chicken but we also love Thai food.  This recipe was simple and I mean simple.  It’s only 4 ingredients.   My husband absolutely loved the recipe and has asked for me to make it again already (I just made it on Saturday)!

Here is the recipe:

Cilantro Thai Grilled Chicken (serves 4)

2 garlic cloves, coarsely chopped
1/2 cup cilantro
2 tablespoons asian fish sauce or 1 tablespoon of GF soy sauce
1 tablespoon toasted sesame oil

Place all the ingredients above in a food processor and process until smooth.

4 boneless skinless chicken breasts

Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
Prepare your grill or broiler. Cook until temperature registers 165F on the meat thermometer. Let the chicken breasts rest for 5 minutes before serving, this prevents the meat from drying up.

National Chocolate Cake Day!

My Baby Pajamas is excited that it’s National Chocolate Cake Day.   That alone is the best reason to bake a cake today.   Now my boys are not a big fan of icing.   In fact, either am I or my husband.  It’s just too sweet for our taste.   So with that being said, I decided to go to our favorite chocolate cake without icing.  It’s the easiest cake to make and then you just sprinkle with powered sugar.

Here is the recipe:  Thank you Recipe Girl!

Ingredients:

1 box Devil’s food chocolate cake mix
1 small box instant chocolate pudding mix
4 large eggs
1/2 cup water
1/2 cup vegetable or canola oil
12 ounces chocolate chips
16 ounces sour cream
powdered sugar, for dusting

Directions:

1. Preheat oven to 350 degrees F. Lightly grease bundt cake pan.

2. In large bowl, use an electric mixer to mix chocolate cake mix, pudding, eggs, water and oil until smooth. Use a rubber spatula to fold in sour cream and chips. Stir until the sour cream is incorporated.

3. Pour the batter into the prepared bundt pan and bake for 50 to 60 minutes, or until a toothpick inserted in the center of the cake comes out clean.

4. Cool thoroughly before removing from pan. To remove, invert onto serving dish and tap firmly on pan. If necessary, gently run a plastic knife around the inner circle of the pan.

5. Sprinkle with powdered sugar just before serving for a nice presentation.

Tuesday Cook Off ~ Skillet Baked Ziti with Italian Sausage

My Baby Pajamas recipe of the week is Skillet Baked Ziti with Italian Sausage.   I found this recipe on Pinterest (by the way, I just LOVE Pinterest) and my husband asked me to make some good old fashion comfort food.  It has been cold here in Phoenix, AZ and comfort food hits the spot!  So I went to Pinterest and started searching around.  He then asked if I would make my baked ziti.   Being Italian, I have all these old family memories of eating mostaccioli at holiday times and images of pasta noodles went flashing through my head.  I wanted to try something different and so I found this great skillet baked ziti.   I can honestly say I don’t know if I will ever make baked ziti the old fashion way again.   This recipe was delicious!  My husband loved it (and already asked me to make it again) and my boys loved it too.

Cinnamon Swirl Banana Bread

My Baby Pajamas recipe of the week is Cinnamon Swirl Banana Bread.  This past week after guest had left from the holidays, I noticed I had bananas that were just too ripe.   So the best thing to do with too ripe bananas is make banana bread!!  My youngest son loves banana bread 🙂  He was excited that I was going to make it for him.   But I wanted to try something new.  I went to Pinterest and found this fabulous recipe!  The cinnamon was not over powering at all.   I will say that if you are going to make it and not eat the whole loaf in one sitting, use plastic wrap to store instead of a air tight container.  We found that the cinnamon was a little soggy the next day.

My Baby Pajamas New Year's Resolutions

I really don’t do resolutions…ever! But as I put 2012 behind me I decided there are a few things I would like to change (who doesn’t want to change a few things).  A new year is a time to reflect on the changes you want or need to make and then follow through with the changes.   With that being said, I have made a list.   Will I get to all of these this year…probably not but they are definitely within reach.

1.  Run a full marathon.  As a avid runner, I have ran many races, 5K, 10K and half of marathons.  But I have never ran a full 26.2 mile marathon.   Will I have time for this this year, probably not because of work and family.   But it’s definitely something that I would like to complete.  If someone has a great training plan for a working, busy mom please pass it on to me 🙂

2. Get my house better organized and for it to stay organized.   Here’s the thing, I can organize well.   It’s the 3 boys in this house that can NOT.  I spend hours trying to clean and organize rooms in the house to find my 7 year old pulling old school papers out of the trash saying, Mommy why did you throw away my spelling test from last year!  Much help is needed here.

3.  Travel to somewhere new.  With my husband and I being from Illinois and we live in Arizona it seems we are always going on vacation were a family member lives.  Yes, I think it’s great for our boys to see and know their relatives but sometimes you need a change.  Yes, we do go up North here in the snow to ski with friends too but again, it’s something we always do.  So this year, I have told my husband we are taking the boys somewhere new in the summer.   Hawaii is on the list 🙂

4.  Learn how to use our Canon professional camera.  When it comes to blogging or taking pictures of the kids, I am guilty of using my camera phone.  Even when I am taking pictures of the Tuesday Cook off food pictures, I use my phone.   Now, I know my pictures would come out much nicer if I used our Canon camera but I admit I am lazy to learn how to use it.

5.  Sell my husband’s truck.  I know what your thinking, sell your husband’s truck. Why is this on your resolutions list?  Well, because we want it gone!!  My husband has a Ford F350 Dually Diesel that is lifted too.  My boys love the truck.  I mean what boy wouldn’t.  But gas is so expensive and now my husband has a sales job where it doesn’t look great rolling up in a dually diesel truck.   So I am praying we sell the truck this week not this year 🙂  Please send us positive thoughts on selling LOL

So what is on your new year’s resolution list?   Be more fit, get a better job, have your kids sleep through the night, sell a truck…whatever it is I hope everything works out for you.

My Baby Pajamas would like to wish everyone a Happy New Year and hope you all had a great holiday season.   We should did and enjoyed the two weeks off of blogging and spent our time putting out Christmas orders 🙂  We also want to say thank you to our customers and hope 2013 is happy and healthy.   Now back to business!

So with the two weeks off of blogging, I had family in for the holidays from Chicago.  My husband and I both grew up in the Chicago area and living in Phoenix, AZ, we miss a few of the Chicago fine delicacies.  Probably the one Chicago food my husband and I miss the most is Al’s Italian Beef.  So after searching Pinterest.com, I found a recipe and it was great!  No, it’s not Al’s Beef but it was great and our boys loved it too.  Which as a mom, you know that always counts for a lot:)  It’s Crock Pot Italian Beef and it will definitely be made again.  Even our family from Chicago loved it!  Plus, much healthier for you too 🙂

My Baby Pajamas recipe of the week is Chocolate Peppermint Chip Cookies.   It’s the holiday season and the holiday baking season 🙂 So I wanted to share with you one of my sons favorite cookie recipe.  My oldest just loves peppermint and nothing says Christmas like Chocolate Peppermint Chip Cookies.   These are absolutely delicious!!
