Tuesday Cook Off ~ Greek Salsa Chicken and Garlic and Herb Roasted Potatoes

After a week off, I am excited to announce this weeks Tuesday Cook Off.   This dish was super easy and my family just loved it.  Now of course you have to be a fan of feta cheese and olives to enjoy this dish.   The chicken breasts are roasted in lemon juice, keeping the chicken super moist and flavorful.   If you have a busy week night, this dish comes together in less than an hour.   I promise it will be a favorite.   I served the Greek Salsa Chicken with Garlic and Herb Roasted Potatoes.   The boys just loved them!!  My youngest even had seconds!!

Here are the recipes:

Greek Salsa Chicken from Sweet Peas Kitchen

Ingredients: 

For the Salsa:
4 ounces crumbled feta cheese
1 cup halved grape or cherry tomatoes
1/4 cup pitted kalamata olives
1/4 cup minced fresh parsley
1/4 cup lemon juice
1/4 cup olive oil
1 tablespoon freshly chopped oregano
For the Chicken:
6 boneless, skinless chicken breast halves (7 ounces each)
pepper to taste
kosher salt to taste
2 tablespoons olive oil
2 lemons, cut into wedges
Directions: 
Preheat oven to 450°.
In a large bowl, combine feta, tomatoes, olives, parsley, lemon juice, 1/4 cup olive oil and oregano. Cover and chill in refrigerator.
Heat 2 tablespoons olive oil in a large roasting pan over medium-high heat. Season chicken with kosher salt and pepper. Sear chicken, about 1-2 minutes each side; remove from heat.
Squeeze lemon wedges over chicken to coat. Place the squeezed lemon wedges around the chicken breasts. Roast until chicken reaches an internal temperature of 160°, about 25-30 minutes. Transfer chicken and lemons to a large platter. Top with salsa.
This dish is also delicious for leftover lunch 🙂
Garlic and Herb Roasted Potatoes
Ingredients: 
  • 1 teaspoon Oregano Leaves
  • 1 teaspoon  Paprika
  • 1 teaspoon  Thyme Leaves
  • ¾ teaspoon Sea Salt
  • ½ teaspoon  Garlic Powder
  • 2 pounds baby red potatoes, quartered
  • 2 tablespoons olive oil
Directions: 
  1. Preheat oven to 425°F. Mix oregano, paprika, thyme, sea salt and garlic powder in small bowl. Set aside.
  2. Toss potatoes with oil in large bowl. Sprinkle seasoning mixture over potatoes. Toss to coat well. Spread potatoes in single layer on foil-lined 15x10x1-inch baking pan.
  3. Bake 30 to 35 minutes or until potatoes are tender and golden brown.

Usually Skinny recipes don’t appeal to me.   It’s not that I don’t like them but I try to eat in moderation whether it’s skinny or not.   But my husband was bugging me to make a few skinny recipes.   He’s trying to lose a couple of pounds I think 🙂  I told him if he would stop snacking on pretzels and cookies at night the couple of pounds would come off.   He agreed but still wanted skinny recipes.

Since Kung Pao Chicken is one of his favorite Chinese take out meals I decided to try this recipe I found on Cookinglight.com.   I was a little worried because sometimes the skinny recipes come up a little short on favor.   This one did not.  In fact, next time I think I will add just a little extra crushed red pepper.   The recipe called for 1 to 1 1/2 teaspoons and I added 1 teaspoons because the boys.  Everyone loved it!  This recipe is simple to prep before and literally only takes a 15-17 minutes to make after the preparation is done.   We all agreed this one is a keeper!

Skinny Kung Pao Chicken

Yields about 4 to 6 servings (depending on who is serving:) )

Ingredients: 

  • 2 tablespoons dark sesame oil
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
  • 3/4 cup water
  • 3 tablespoons lower-sodium soy sauce
  • 2 teaspoons cornstarch
  • 1 teaspoon brown sugar
  • 1/2 teaspoon bottled minced ginger
  • 1 to 1 1/2 teaspoons crushed red pepper
  • 1 cup thinly sliced red bell pepper (about 1 large pepper)
  • 1 cup snow peas, trimmed
  • 2 tablespoons chopped unsalted, dry-roasted peanuts

Directions: 

  1.  Heat sesame oil in a large skillet over medium-high heat. Add onion to pan; sauté 3 minutes or until softened. Add garlic; sauté 30 seconds, stirring constantly. Add chicken; sauté 3 minutes or until chicken begins to brown.
  2.  Combine 3/4 cup water and the next 5 ingredients (through crushed red pepper), stirring with a whisk until sugar dissolves. Add water mixture to pan; bring to a boil. Add bell pepper and snow peas to pan; cook for 2 minutes or until vegetables are crisp-tender and sauce thickens. Sprinkle with nuts.

School is back and the first quarter for my boys is done.   Fall break was last week and the sports begin to pick up.   Now is the time my oldest starts basketball season with practice two nights a week plus a game a week.   Add that on top of my youngest sons martial arts schedule which is 5, yep 5 days a week.   He doesn’t have to go that often but it’s his choice and my husband and I let him.   Thank goodness it is only 2 miles from the house 🙂  Anyway, with the boy’s busy schedules plus work for my husband and I, dinner during the week gets hard.   So I went searching for an easy recipe that does not take long to prepare and is delicious.   Well, this Lemon Chicken recipe is awesome and so so easy!!  It does have to cook for an hour but that’s not a problem in our house because someone is usually home preparing dinner while the other one is driving the kids around.   We like to tag team in our house.   One parent takes and the other picks up or one parent handles one kid after school activities and the other parent handles the other kids activities.

This recipe smells delicious as it’s cooking and the boys ate it up!!  I served it with couscous and a salad.   It was the perfect dinner and the boys thought I cooked all day 🙂

Recipe from Annie’s Eats

Yields about 6-8 servings

Ingredients:

2 tbsp. lemon zest
1/3 cup freshly squeezed lemon juice
2 cloves garlic, crushed
2 tsp. fresh thyme leaves
1 tsp. fresh rosemary leaves, finely minced
1 tsp. salt
1 tsp. black pepper
2-4 lbs. of bone-in, skin-on chicken thighs or drumsticks
2-3 tbsp. melted butter
Thinly sliced lemons, for garnished

Directions: 

Combine the lemon zest, lemon juice, garlic, thyme, rosemary, salt and pepper in a large zipper-lock plastic bag.  Seal the bag and shake well to blend.  Place the chicken pieces in the bag with the marinade, pressing out excess air and sealing once more.  Refrigerate and let marinate for 2 hours.  I marinated my chicken for about 4 hours.   Also, when I combined the ingredients in the bag I didn’t think it was going to cover all the chicken.   The favor was perfect!

Preheat the oven to 425˚ F.  Remove the chicken pieces from the marinade and transfer to a baking dish, skin-side up, reserving the leftover marinade.  Brush the top of each piece of chicken with melted butter.

Bake for 50-55 minutes, until the skins are crispy and well-browned.  Halfway through baking, pour the remaining marinade over the chicken pieces in the baking dish.  Once fully baked, cover loosely with foil and let rest 10 minutes before serving.  Transfer to a serving platter, garnish with lemon slices and serve.

My kids love take out Chinese food but it’s not the healthiest for you at all.   When I came across this recipe for sesame chicken (one dish we like to order at take out), I knew I just had to try it.  It’s much healthier than take out and you use chicken breast too.   This recipe is so easy and prep time is about 10 minutes.  Really this recipe was a win win for the whole family.   I made this recipe this weekend when we were painting my youngest son’s bedroom.  It was great because I took the 10 minutes to prep the recipe and then set it and forgot about it until dinner time.  You have to love that!!

Recipe from: Family Fresh Meals

Ingredients: 

  • 3-4 boneless, skinless chicken breasts
  • Salt and pepper
  • 1 cup honey
  • ½ cup soy sauce
  • ½ cup diced onion
  • ¼ cup ketchup
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • 2 teaspoons cornstarch dissolved in 3 Tablespoons water
  • Sesame seeds

Directions: 

  1. Start by seasoning chicken lightly with salt and pepper and place into crock pot.
  2. In a bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes.
  3. Pour over chicken.
  4. Cook on LOW for 5-6 hours or on HIGH 3-4 hours,
  5. or just until chicken is cooked through.
  6. Remove chicken from crock pot with a slotted spoon, leaving sauce behind.
  7. Dissolve 2 teaspoons of cornstarch in 3 tablespoons of water and pour into crock pot.
  8. Stir to combine with sauce. Replace lid and cook sauce on HIGH for ten more minutes until the sauce has thickened.
  9. Shred chicken with two forks and then return to pot and toss with sauce before serving.
  10. Sprinkle with sesame seeds and serve over rice or whatever you like!

This week on Tuesday Cook Off; My Baby Pajamas would like to share with you all a great, one skillet, and delicious recipe.  Today’s feature recipe is Baked Gnocchi with Chicken.   I just love gnocchi.  Being Italian and growing up eating a lot of pasta, my favorite was always gnocchi.   So when I came across this recipe in my new favorite magazine “Food Network Magazine”, I just had to try it.  This recipe was real simple to pull together because you use package gnocchi and a rotisserie chicken.   Everything else you probably have in your pantry if you cook a lot.

When doing a one-skillet recipe I like to measure everything out ahead of time.   This way it’s all right at your finger tips when you need it.   It was a snap to pull together and my husband absolutely loved this recipe!!  He too is a big fan of gnocchi.

A great thing about one-skillet recipes is easy clean up!   Only one skillet to clean.   You cook it all on the stove first and then put the skillet right in the oven.  Love that!!

Recipe from: Food Network

Ingredients : 

1 tablespoon extra-virgin olive oil
8 ounces white mushrooms, sliced (about 4 cups)
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 cup low-sodium chicken broth
1/4 teaspoon freshly grated nutmeg
1/2 rotisserie chicken, skin removed, meat shredded (about 2 cups)
1 17.5-ounce package potato gnocchi
1 1/2 cups loosely packed baby spinach
1/4 cup grated parmesan cheese (about 1 ounce)

Directions: 

Position a rack in the upper third of the oven and preheat to 425 degrees F. Heat the olive oil in a deep ovenproof skillet over medium-high heat. Add the mushrooms, season with salt and pepper and cook, stirring occasionally, until lightly browned, about 4 minutes. Transfer to a plate and wipe out the skillet.

Melt the butter in the skillet over medium heat; add the flour and cook, whisking, 3 minutes. Whisk in the milk and chicken broth until smooth; simmer, whisking constantly, until slightly thickened, about 5 minutes. Whisk in 1/2 teaspoon salt and the nutmeg.

Add the chicken, mushrooms, gnocchi and spinach to the sauce and stir until coated and the spinach wilts. Sprinkle with the parmesan, transfer the skillet to the oven and bake until bubbling, about 20 minutes. Turn on the broiler; broil until lightly browned on top, about 3 more minutes.

Per serving: Calories 598; Fat 35 g (Saturated 16 g); Cholesterol 177 mg; Sodium 984 mg; Carbohydrate 32 g; Fiber 2 g; Protein 39 g

With it being back to school and everyone trying to get back on schedule, I thought I would feature a simple but delicious easy dinner.   I don’t know about your house but our house takes a couple of weeks to get back into the swing of things once school starts.   Getting back into a routine is important but my boys fight me tooth and nail.   My youngest hates that his bedtime is 8:15 again.   My oldest is a teenager but my husband and I like for him to be in bed and watching TV by 9 pm.   We know that after a long day of school it doesn’t take him long to fall asleep.   Of course my husband always sets my sons TV timer so it does not stay on all night.  Yes, by this time the grown ups are in bed too 🙂

If your house is like ours after school its homework, homework and more homework.  Plus, factor in errands and after school activities.   I feel like I am in my car from 3 pm to at least 5:30 most days.   This is way cooking dinner in the crock-pot is a busy moms dream.

I actually found this recipe on Facebook and loved that it was low in calories.   I am always looking for new ways to cook chicken because BBQ can get old quick!    This recipe was so simple and it was delicious.   I served it with Roasted Garlic Quinoa and steamed broccoli.   Everyone in the house loved the chicken!!

Ingredients:

1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons dried minced onion
4 garlic cloves, minced
1 tablespoon extra virgin olive oil
1/2 cup balsamic vinegar
8 boneless, skinless chicken thighs (about 24 ounces) or breasts
sprinkle of fresh chopped parsley

Directions: 
Combine the first five dry spices in a small bowl and spread over chicken on both sides. Set aside. Pour olive oil and garlic on the bottom of the crock pot. Place chicken on top. Pour balsamic vinegar over the chicken. Cover and cook on high for 4 hours. Sprinkle with fresh parsley on top to serve.   Note:  I did double the first five dry spices to cover the chicken.   Which I think really helped with the favor.

My family and I eat a lot of chicken.   So I am always looking for new ways to marinate chicken to grill.   We grill often here in Phoenix because the weather is nice plus it’s easy clean up.   I love that!  Not only do my family and I like chicken but we also love Thai food.  This recipe was simple and I mean simple.  It’s only 4 ingredients.   My husband absolutely loved the recipe and has asked for me to make it again already (I just made it on Saturday)!

Here is the recipe:

Cilantro Thai Grilled Chicken (serves 4)

2 garlic cloves, coarsely chopped
1/2 cup cilantro
2 tablespoons asian fish sauce or 1 tablespoon of GF soy sauce
1 tablespoon toasted sesame oil

Place all the ingredients above in a food processor and process until smooth.

4 boneless skinless chicken breasts

Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
Prepare your grill or broiler. Cook until temperature registers 165F on the meat thermometer. Let the chicken breasts rest for 5 minutes before serving, this prevents the meat from drying up.
