Tuesday Cook Off ~ The Best Blueberry Muffins

In our house blueberry muffins are a big request from my husband and my youngest son.   My husband likes them so much he will even make a box of Jiffy blueberry muffins on his own.  GROSS!!  Anyway, I came across this recipe that has a crumb topping.   I just love crumb toppings!  Well, I just had to give it a try.   Also, these blueberry muffins are made with Greek yogurt that really makes these muffins moist.  I promise if you like blueberry muffins, you will LOVE these!  Enjoy baking 🙂

Here is the recipe:

 Yield: 2 1/2 dozen standard muffins

Ingredients

For the Batter:
    • 4 eggs
    • 2 1/2 C sugar
    • 1 C canola oil
    • 1 tsp vanilla
    • 2 C plain traditional Greek yogurt (I’ve never tried using fat-free and don’t know how it works)
    • 4 C AP flour
    • 1 tsp kosher salt
    • 1 tsp baking soda
    • 3 C fresh or frozen blueberries tossed with 1 tbsp of flour just before adding to the batter
For the Crumb Topping:
  • 3/4 C brown sugar
  • 1 1/2 C AP flour
  • 1/2 C butter, cut into small pieces
  • 2 tsp ground cinnamon

Instructions

  1. Preheat oven to 375 degrees
  2. Make crumb topping by combining all ingredients in a bowl and pinching with your fingers until the butter is fully incorporated and it looks like coarse sand. Set aside.
  3. Combine the eggs, sugar, oil, and vanilla; mixing until smooth.
  4. In a separate bowl combine the flour, salt and baking soda.
  5. Alternately add 1/3 flour and 1/3 yogurt to the sugar mixture and repeat, stirring just slightly between each addition. The key to moist muffins is to keep the batter from becoming over mixed. Only mix until no dry spots remain- there will be lumps and that’s okay.
  6. Gently fold in the blueberries, mixing only until they are evenly distributed.
  7. Scoop batter into muffin tin until 2/3 full. Spoon 1 1/2-2 tbsp of crumb mixture on top of each muffin (it will look like a lot of crumbs).
  8. Bake for 20-25 minutes or until the tops are golden and a toothpick inserted into the center comes out clean with only moist crumbs.

Tuesday Cook Off ~ Cilantro Thai Grilled Chicken

My family and I eat a lot of chicken.   So I am always looking for new ways to marinate chicken to grill.   We grill often here in Phoenix because the weather is nice plus it’s easy clean up.   I love that!  Not only do my family and I like chicken but we also love Thai food.  This recipe was simple and I mean simple.  It’s only 4 ingredients.   My husband absolutely loved the recipe and has asked for me to make it again already (I just made it on Saturday)!

Here is the recipe:

Cilantro Thai Grilled Chicken (serves 4)

2 garlic cloves, coarsely chopped
1/2 cup cilantro
2 tablespoons asian fish sauce or 1 tablespoon of GF soy sauce
1 tablespoon toasted sesame oil

Place all the ingredients above in a food processor and process until smooth.

4 boneless skinless chicken breasts

Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
Prepare your grill or broiler. Cook until temperature registers 165F on the meat thermometer. Let the chicken breasts rest for 5 minutes before serving, this prevents the meat from drying up.

Tuesday Cook Off ~ Mini Chicken Pot Pies

So I have to admit, I am becoming obsessed with cooking food in a muffin pan.   First, they are the perfect serving size if you are watching your food intake and second, they are so cute!   You have to agree they do make a cute meal 🙂   Anyway, I had been looking for a easy recipe for a chicken pot pie recipe and came across this recipe from quick-dish.tablespoon.com.   This recipe was so easy to make and so good.   I made them for dinner for the whole family and then had left overs for lunch.  I just love when that happens.   My husband absolutely just loved them.   He even had his left over chicken pot pie cold and said it was just as good cold.

Crock Pot Italian Beef

My Baby Pajamas would like to wish everyone a Happy New Year and hope you all had a great holiday season.   We should did and enjoyed the two weeks off of blogging and spent our time putting out Christmas orders 🙂  We also want to say thank you to our customers and hope 2013 is happy and healthy.   Now back to business!

So with the two weeks off of blogging, I had family in for the holidays from Chicago.  My husband and I both grew up in the Chicago area and living in Phoenix, AZ, we miss a few of the Chicago fine delicacies.  Probably the one Chicago food my husband and I miss the most is Al’s Italian Beef.  So after searching Pinterest.com, I found a recipe and it was great!  No, it’s not Al’s Beef but it was great and our boys loved it too.  Which as a mom, you know that always counts for a lot:)  It’s Crock Pot Italian Beef and it will definitely be made again.  Even our family from Chicago loved it!  Plus, much healthier for you too 🙂
