snickerdoodle cookies

The BEST Snickerdoodle Cookies!

Even though I took time off from the blog because of my crazy families hectic schedule that does not mean I stopped cooking and baking.   With a teenager in the house (plus teenager friends) I seem to be baking a lot more often 🙂  But I don’t mind because I love it.

This recipe is one of my oldest son’s favorite recipes.  He just loves a Snickerdoodle cookie!  It’s an easy recipe and you probably have all the ingredients in your pantry.  I found the recipe on Lovintheoven.com blog.   I promise you will not be disappointed.   You must add this recipe to your to do list!

Yields: 16 to 18 cookies

Ingredients:

    • 1/2 cup butter (1 stick), softened
    • 1/2 cup granulated sugar
    • 1/3 cup brown sugar
    • 1 egg
    • 1/2 teaspoon vanilla
    • 1 1/2 cups flour
    • 1/4 teaspoon salt
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon cream of tartar
For rolling:
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon

Directions:

  1. In a large bowl, cream together the butter and sugars with an electric mixer on high speed. Add the egg and vanilla and beat until smooth.
  2. In another bowl, combine the flour, salt, baking soda, and cream of tartar.
  3. Pour the dry ingredients into the wet ingredients and mix well.
  4. Preheat oven to 300 degrees while you let the dough rest for 30 to 60 minutes in the refrigerator.
  5. In a small bowl, combine the sugar with the cinnamon for the topping.
  6. Take about 2 1/2 tablespoons of the dough and roll it into a ball. Roll this dough in the cinnamon/sugar mixture and press it onto an ungreased cookie sheet. Repeat for the remaining cookies.
  7. Bake the cookies for 12 to 14 minutes and no more. The cookies may seem undercooked, but will continue to develop after they are removed from the oven. When the cookies have cooled they should be soft and chewy in the middle.

I have fallen in love with baking ever since I had to start baking for my oldest son because of his allergies.  But there has been one thing I never really enjoyed baking…chocolate chip cookies.  I know it’s crazy!  That’s not American!  I figured out why I didn’t like baking chocolate chip cookies…it’s because I really haven’t found a recipe I enjoyed.  Well, that has come to an end, I found a recipe I really like to bake and eat!  I have always been a fan of a chewy chocolate chip cookie so have my husband and boys.   Not many recipes out there are for chewy cookies but I found one and it was a big hit in our house and I would like to share it.

I hope you enjoy this cookie.  The vanilla pudding package really gives this cookie that chewy texture I just love in my cookie.  Plus, the cookies were still chewy after a few days.  I stored in a ziplock bag.

Chocolate Chip Pudding Cookies
Yields 36 cookies

1 cup (2 sticks) Butter, softened
3/4 cup Brown Sugar
1/4 cup White Sugar
1 small pkg Instant Vanilla Pudding mix
2 eggs
1 teaspoon Vanilla Extract
2 1/4 cups All-Purpose Flour
1 teaspoon Baking Soda
1 pkg ( 12 oz) Milk Chocolate Chips

DIRECTIONS: Preheat oven to 375 degrees. Beat the butter, both sugars, pudding mix, eggs and vanilla in a large bowl. Beat until creamy and fluffy. Then slowly mix in flour and baking soda. Stir in chocolate chips.
Drop by tablespoonfuls, onto an un-greased cookie sheet. Bake for ONLY 9-10 minutes. Remove from oven and let cool about 10 minutes before eating.

Have you ever tried the cookies at Subway?   My boys just love Subway and I would much rather get them Subway when we are in a rush than any other fast food place.  So a couple of months ago I was getting my boys Subway and they were stocking their cookies. I noticed they had a White Chocolate Raspberry Cookie; I had to try it!  Well, it was delicious.   Ever since then I have been looking for a recipe similar to the Subway cookie.   I think I have found it!!

The recipe calls for using Jiffy Raspberry muffin mix.  When my husband heard this, he was in!  Yes, I am serious.  Most people would be like really Jiffy the 99-cent muffin mix.  Where as my husband loves Jiffy…really.  In fact, it’s a big joke in the house every time I make muffins.  He always says, “Please tell me you are making my favorite…from the Jiffy box”.

Anyway, this recipe is very easy to make and I hope you enjoy them!!  They also freeze well.

Yields about 3 dozen cookies depending on size

2 (7-ounce) boxes Jiffy raspberry muffin mix
4 ounces cream cheese, softened
1/2 cup (1 stick) butter, softened
2 tablespoons butter-flavored shortening
1/2 cup brown sugar, firmly packed
2 eggs
1 1/2 cups white chocolate chips
In the bowl of an electric mixer fitted with the paddle attachment, beat together the cream cheese, butter, shortening, and brown sugar, until just combined.   Add the eggs one at a time, beating well after each addition.
Add the muffin mix and using a wooden spoon, mix until incorporated. Stir in the white chocolate chips and place in the refrigerator to chill for at least 2 hours.
Preheat oven to 350°F. Lightly grease baking sheets and roll dough into tablespoon-size balls. Place 2-inches apart on baking sheet and bake for 10-12 minutes, until just turning golden around the edges.  Each oven will vary in time.   Mine baked about 9:30 minutesCool five minutes on baking sheet before removing to wire racks to cool completely.
